Job Description
Quince & Co. is the restaurant group founded by Michael and Lindsay Tusk, encompassing Quince, Cotogna, Verjus and Officina. The group is defined by a commitment to exceptional ingredients, strong producer relationships, and operational excellence across all areas of the business. The Central Purchaser is responsible for overseeing purchasing and product procurement across Quince & Co. This role ensures that all restaurants receive the products they need, when they need them, at the highest quality and best possible value. The Central Purchaser serves as the primary liaison between vendors, culinary leadership, operations, and accounting, managing purchasing processes, inventory controls, pricing negotiations, and product logistics across the group. This position reports to the Chief Operating Officer and works closely with culinary leadership, restaurant management, and the finance team. Purchasing & Procurement Manage daily purchasing activities for Quince, Cotogna, Verjus, and supporting operations. Place and oversee orders across all major product categories including food, beverage, smallwares, disposables, cleaning supplies, and operating supplies. Maintain purchasing schedules and ensure timely product delivery to all locations. Source new products and vendors as needed while maintaining quality standards established by the culinary and operations teams. Develop and maintain strong relationships with suppliers and distributors. Vendor Management Negotiate pricing, payment terms, and service agreements with vendors. Monitor market conditions and pricing trends to identify cost-saving opportunities. Evaluate supplier performance related to quality, consistency, delivery, and service. Resolve vendor discrepancies, shortages, credits, and invoice issues. Inventory & Cost Controls Monitor inventory levels across all locations and ensure proper ordering practices. Partner with management teams to minimize waste, over-ordering, and stock shortages. Support monthly inventory processes and reporting. Track purchasing trends and identify opportunities for improved efficiencies and cost control. Assist with food cost analysis and purchasing reports. Logistics & Distribution Coordinate deliveries and product distribution between restaurant locations. Manage intercompany transfers and ensure accurate documentation. Maintain purchasing records and product databases. Ensure receiving procedures are followed consistently across locations. Financial Administration Review invoices for accuracy and ensure proper coding and submission. Work closely with accounting to resolve invoice discrepancies and vendor inquiries. Maintain purchasing logs and support budget tracking. Prepare regular purchasing and cost reports for leadership. Operational Support Collaborate with culinary and operations leadership on menu rollouts, special events, and seasonal purchasing needs. Assist with forecasting product requirements for holidays, events, and business fluctuations. Support new restaurant initiatives, projects, and operational improvements as needed. Qualifications 3-5+ years of purchasing, procurement, inventory, or supply chain experience. Restaurant, hospitality, food service, or multi-unit operations experience strongly preferred. Strong organizational and administrative skills. Excellent negotiation and vendor management abilities. Advanced proficiency with Excel and purchasing/inventory systems. Strong attention to detail and follow-through. Ability to manage multiple priorities in a fast-paced environment. Strong communication and relationship-building skills. Valid driver's license and ability to travel between company locations as needed. What Success Looks Like Restaurants consistently receive products accurately and on time. Vendor relationships are strong and pricing remains competitive. Inventory levels are properly maintained with minimal waste and shortages. Purchasing records, invoices, and transfers are accurate and timely. Cost-saving opportunities are regularly identified and implemented. Operations teams view purchasing as organized, responsive, and dependable. Leadership has clear visibility into purchasing activity, costs, and trends.
