Position Summary The Fish Buyer is responsible for sourcing, purchasing, and ensuring the quality of fresh seafood products for restaurant operations. This role works closely with culinary leadership, vendors, and restaurant management to secure the highest quality seafood while maintaining cost targets, inventory levels, and product consistency. The Fish Buyer serves as a steward of the company's seafood standards, leveraging market knowledge, supplier relationships, and quality inspections to ensure guests receive exceptional products that reflect the restaurant's commitment to excellence. Key Role Responsibilities Procurement & Purchasing Source and purchase fresh fish, shellfish, and specialty seafood products from approved suppliers, fish markets, and distributors. Monitor daily seafood market conditions, pricing trends, availability, and seasonal fluctuations. Negotiate pricing, delivery schedules, and purchasing agreements with vendors. Place daily and weekly seafood orders based on business forecasts, sales trends, and operational needs. Maintain strong relationships with domestic and international seafood suppliers Quality Assurance Inspect seafood products upon arrival to ensure freshness, quality, appearance, and compliance with company standards. Evaluate seafood based on species-specific quality indicators, including color, texture, odor, and overall condition. Reject products that do not meet established quality specifications. Collaborate with culinary teams to develop and maintain seafood quality standards and product specifications. Ensure proper handling, storage, and rotation practices are followed to preserve product integrity Inventory & Cost Management Monitor seafood inventory levels and minimize waste through effective purchasing practices. Analyze purchasing data, yields, and food costs to identify opportunities for improvement. Maintain accurate records of purchases, pricing, and supplier performance. Support budgeting and forecasting efforts related to seafood procurement. Work closely with restaurant operations to balance product availability with inventory efficiency Supplier & Market Management Develop and maintain relationships with fishermen, wholesalers, importers, and seafood distributors. Conduct supplier evaluations and monitor vendor performance. Stay informed on seafood sustainability practices, regulations, and industry developments. Identify alternative sourcing options to ensure consistent supply during market shortages or disruptions. Participate in vendor meetings, seafood auctions, and market visits as needed. Compliance & Food Safety Ensure compliance with all applicable food safety regulations and company policies. Verify supplier certifications and documentation where required. Maintain records related to seafood traceability and product sourcing. Support company initiatives related to sustainability and responsible sourcing. Knowledge, Experience & Skills 3+ years of seafood purchasing, fish market, seafood distribution, or culinary experience involving seafood procurement. Strong knowledge of fish species, shellfish, seafood quality indicators, seasonality, and market pricing. Experience working within fine dining, luxury hospitality, seafood distribution, or high-volume restaurant environments preferred. Proven negotiation and vendor management skills. Strong analytical and organizational abilities. Ability to work early morning hours and maintain flexibility based on market schedules and deliveries. Proficient in Microsoft Office and inventory or purchasing systems. Excellent communication and relationship-building skills. Deep understanding of seafood quality and sourcing. Strong attention to detail and commitment to excellence. Ability to make informed purchasing decisions in a fast-paced environment. Effective relationship management with suppliers and internal stakeholders. Passion for hospitality, culinary excellence, and premium seafood products Physical Requirements Ability to work in refrigerated environments and seafood-receiving areas. Ability to lift and carry up to 50 pounds. Ability to stand, walk, bend, and inspect products for extended periods. Ability to travel locally to markets, suppliers, and restaurant locations as needed. Compensation The annual pay range for this position is $75,000 per annum.
