Conduct patient assessments to determine appropriate meal plans, considering physiology knowledge, health coaching insights, and individual preferences. Oversee the dietary department's budgeting processes, inventory management, and procurement to maintain cost-effective operations. Ensure compliance with all federal, state, and local regulations related to nutrition services in skilled nursing environments.
