We're not looking for someone who just wants to manage from the sidelines — we're looking for someone who takes pride in great barbecue, thrives under pressure, leads from the front, and understands what it takes to run a busy, high-volume culinary operation. At Crydermans, barbecue is serious business. We trim a lot of briskets, cook a lot of meat, move fast, and hold ourselves to high standards. The right person for this role understands that every detail matters — from the way the pits are running to the quality of the sides, sauces, desserts, and the systems behind the scenes that keep everything moving. The day-to-day responsibilities of this role involve overseeing and managing culinary operations across the company, but we're also looking for someone who is willing to jump in wherever needed when things get busy or problems pop up. Whether that means trimming briskets, running the pits, running the kitchen, making sides, sauces, and desserts, or banging out dishes when we are buried, this role is about being the solution and helping keep the team moving forward no matter what the day throws at you. What You'll Do Culinary & Kitchen Operations Oversee all day-to-day culinary operations across the company Manage kitchen workflow while ensuring consistency, quality, cleanliness, and efficiency Supervise and assist with: Meat trimming BBQ cook operations Production of sides, desserts, and sauces Trim elimination programs including sausage, burgers, burnt ends, chopped brisket, tallow, and other value-added products Learn and become proficient in all culinary areas and be capable of covering shifts when necessary Ensure stations remain clean, organized, stocked, and operating to company standards Production & Menu Development Collaborate on specials and seasonal menu items Develop creative and effective ways to utilize byproducts, trim, and leftovers to minimize waste and maximize profitability Oversee culinary execution for: Day-to-day store operations Catering Pre-orders Food truck menus Specialty events Inventory & Purchasing Conduct weekly inventory counts Handle food ordering and receiving truck deliveries Establish pars and maintain inventory controls Assist with food cost management and waste reduction initiatives Set and manage cook schedules for the pit crew Team Leadership & Training Work closely with team managers to ensure staff are trained and knowledgeable on: Regular menu items Specials Food preparation standards Company procedures Lead by example and help create a culture of accountability, teamwork, pride, and consistency Monitor staff performance and provide coaching, support, and follow-up when needed Staff Management & Development Assist with interviewing, hiring, onboarding, and training new employees Help build and maintain a strong, positive, and accountable team culture Write and manage weekly staff schedules based on business needs and labor goals Conduct employee coaching and performance reviews when necessary Address performance issues professionally and effectively, including disciplinary action when needed Help develop team members through hands-on leadership, training, and accountability Ensure staff are following company standards, procedures, cleanliness expectations, and food safety practices Lead with professionalism, consistency, and clear communication Compliance & Operational Oversight Review and follow up on: Staff checklists Waste sheets HACCP documentation Ensure documentation is completed accurately and on time Maintain cleanliness, food safety, and operational standards across all culinary areas Collaboration & Process Improvement Work alongside the Operations Manager to streamline systems and improve efficiency Help maximize profitability through operational improvements and waste reduction Perform additional duties as assigned by the Operations Manager or Owners What We're Looking For Proven kitchen leadership or culinary management experience required BBQ, meat fabrication, and high-volume production experience strongly preferred Strong understanding of inventory management, food costing, scheduling, and team development Ability to lead by example in a fast-paced environment Strong organizational and communication skills Knowledge of food safety and HACCP procedures Creative mindset with strong problem-solving abilities Someone who is dependable, self-motivated, calm under pressure, and takes ownership of their work Someone who can hold standards high while still building a strong and positive team culture Willingness to work flexible hours, including weekends and holidays as needed Compensation & Benefits Weekly paid salary Quarterly performance bonuses Paid sick time Two weeks paid vacation Cell phone allowance Why Crydermans?
