The environment, the pace, the tech, the music, the staff—every piece is intentional. It's bigger than hot dogs and beer. It's about people reconnecting. The Prairie Dog Taproom is Hill City's first self‑pour taproom, serving artisan hot dogs, bison burgers, hoagies, and hand‑crafted Tipo 00 pizzas alongside 28 taps of craft and domestic beer. Guests pour their own, order from their phones, and settle in by the creek or inside the Prairie Dog living room without feeling rushed or ignored. Please review our website at www.theprairiedogsd.com and our Google Reviews. Role Overview We are seeking an experienced Griddle Lead to join our culinary team. The ideal candidate will be an in-the-trenches and have experience in meal preparation and a strong understanding of food service operations within a restaurant environment. Although we are not a restaurant (we are a taproom selling a ton of scratch food) as a Griddle Lead, you will be responsible for crafting delicious, artisan hot dogs and hoagies while maintaining high standards of quality and hygiene in the kitchen. Your culinary skills and attention to detail will contribute to our commitment to providing exceptional dining experiences. Must be willing to make pizzas as trained. We have the best pizza in South Dakota specializing in a Hybrid Neapolitan/Jersey style dough. We are open to bringing in the right candidate from Texas, Oklahoma or other surrounding states. Duties Prepare and cook a variety of products according to established recipes and customer preferences. Ensure all ingredients are fresh, properly stored, and ready for use. Maintain cleanliness and organization in the kitchen, adhering to food safety regulations. Operate kitchen equipment such as ovens, mixers, and knives safely and efficiently. Collaborate with other kitchen staff to ensure timely meal preparation and service. Monitor inventory levels of ingredients and communicate needs to management. Assist in menu development by suggesting new pizza recipes or improvements. Participate in training new kitchen staff on pizza preparation techniques. Requirements Proven experience as a cook in a restaurant or food service environment, preferably with a focus on the Griddle and preparation. Knowledge of culinary techniques, food safety practices, and kitchen equipment operation. Strong knife skills and familiarity with various cooking methods. Ability to work efficiently in a fast-paced kitchen setting while maintaining high-quality standards. Excellent communication skills and ability to work as part of a team. A passion for the culinary arts and creativity in meal preparation. Previous experience as a dietary aide or within the dietary department is a plus but not required.
