It involves planning menus, ordering food products, and preparing nutritionally balanced meals and snacks for children ages one through six years. The cook is under the supervision of the Executive Director. 1.
Qualifications:
High School diploma required, prefer additional education in nutrition and/or food preparation. Experience with institutional cooking and/or child care, knowledge of DHS childcare licensing and USDA Food Program preferred. 2.
Responsibilities related to others:
Meet with Administrative and/or Assistant Director to discuss menus and food ordering. Maintain communication with the office staff regarding food allergies, medical conditions, and food preferences of newly enrolled children. Maintain communication with the office staff regarding enrollment numbers Plan and post weekly menus, giving copies of menus in advance to the Executive Director and/or Assistant Director for approval. Note changes on the posted menus when necessary Be open to suggestions from Administration or Board of Directors for improving menus and changes to be made to the operation of the food program. Inform the Executive Director when kitchen equipment needs repair, when equipment is needed and should be purchased, or when other difficulties arise. Orient and train new kitchen staff in regard to policies and procedures related to food preparation 3.
Food Preparation:
Order food online on a weekly basis. Check all food orders against packing slips as they are delivered. Inventory food on a weekly and monthly basis Have breakfast, lunch, and snack prepared at stated meal times. Prepare enough food so that the children can have a full serving plus extra servings as requested. Serve food in containers that promote family style eating. Plan and ensure appropriate substitutions for children who have food allergies, medical conditions and/or vegetarian food preference. Have allergy and medical information pertaining to food preparation posted in the kitchen Wash dishes after the noon meal, assist classrooms in sanitizing their dishes, and ensure that all food is properly stored after the meal Discard those foods that cannot be used or served again 4.
Care of Equipment, Storage, and Documentation:
Ensure that the kitchen is organized in an efficient manner Monitor non-food supplies and ensure ordering of trash bags, bleach, and paper products as needed. Maintain the kitchen area in a sanitary manner at all times in accordance with state health regulations and DHS Childcare Licensing 132 Clean the refrigerators and freezers weekly, wash and organize shelves in the pantry, wash and organize kitchen cupboards, wash cupboard doors, clean ovens, stove top, and burners, and wash dishes as needed. Wash kitchen laundry as needed on a daily basis. Keep and file support materials, including signed menu copies, USDA correspondence about food and kitchen procedures, special needs recipes (vegetarian meals, etc.), menu cost analysis, and time studies. 5.
Physical and Mental Stamina Including:
Repeated lifting of up to 30 lbs. and/or more Standing for long periods of time Ability to run (as needed) Written and oral communication skills Basic math skills (specifically units of measure) Computer skills with knowledge of Microsoft Word and online purchasing Ability to remain calm in stressful situations Ability to effectively operate in a fast-paced environment Ability to quickly move from sitting on the floor to standing position repeatedly Ability to be in an environment with bleach and other sanitizing agents There may be additional physical and/or mental requirements based on the needs of specific situations.
