Job Description
SummaryThis is a unique opportunity to work outdoors near some of the countrys most iconic national parks as part of the ULUM resort experience in the Moab area. The Food & Beverage Manager leads all onsite food and beverage operations, including restaurant, bar, micro-market, and specialty coffee, and plays a key role in delivering an elevated, culinary-driven guest experience aligned with ULUMs luxury positioning. This role oversees forecasting, ordering, team leadership, and departmental financial performance, with a focus on driving revenue, guest satisfaction, and team engagement. The Food & Beverage Manager will collaborate closely with the Corporate Food & Beverage team to execute brand standards, operational initiatives, and menu strategy, and may serve as Manager on Duty while supporting broader property operations as needed.
Key ResponsibilitiesDrive a culinary-forward dining experience aligned with ULUMs luxury brand standardsPartner with culinary leadership on seasonal, locally inspired menus reflective of the Moab regionEnsure consistent food quality, presentation, and service execution across all outletsLead, develop, and build a high-performing F&B team through hiring, coaching, and trainingOversee collaboration between front and back of house to ensure efficient service flowManage food and labor costs through menu engineering, portion control, and waste reductionLead menu education and tastings to drive team knowledge and guest engagementMonitor guest feedback and implement improvements to enhance the dining experienceBuild relationships with local vendors and purveyors to support quality and regional sourcingEnsure compliance with food safety standards, certifications, and company SOPsIdentify opportunities to improve operations, financial performance, and guest satisfactionTrack and drive key metrics including NPS, eNPS, and financial goalsCollaborate with property and corporate teams to support overall camp operations and successQualifications & ExperienceHigh School Diploma or GED or equivalent work experience2+ years of Food & Beverage Management experience in a fast-paced, results-driven environment, preferably in hotels or hospitality2+ years of previous culinary experienceKnowledge of federal food safety standards and current Food Safety Manager certification requiredTrack record of managing profitability through proper staffing, effective control of food, beverage, and labor costs and achieving budgeted targetsAble to consistently interact with a friendly, enthusiastic, positive attitude with guests and team membersWillingness to assist in all roles to support the operation and supporting property

Physical demands associated with this position include extensive walking, standing, bending, twisting, lifting, and maneuvering in an outdoor environment on uneven surfaces.
Ability to work in extreme weather conditions including but not limited to heat, cold, rain, snow, humidity, and wind. This position is contingent upon the satisfactory completion of a background check and/or motor vehicle records check, if requested by Under Canvas.
