Job Description

Job Summary Our Food Service Manager is in charge of all facets of our Deli. This includes maintaining a clean deli environment, inventory, scheduling, creation/execution of daily food specials, and developing our deli staff members. They also help ensure a positive experience for all guests traveling through.
Managerial Responsibilities:
  • Conduct deli employee meetings as needed.
  • Assess staffing needs. Assist in the interview and selection process for new deli staff.
  • Assist in training/coordination of training for existing and new team members on proper sanitization, procedures, computerized systems, sales, and customer service.
  • Oversee staff and fulfill staffing needs for regular hours, as well as special events or high-traffic times.
  • Maintain and motivate an effective and positive team through communication, incentives, and regular evaluations.
  • Provide ongoing feedback, coaching, and mentorship to the deli employees.
  • Handle disciplinary measures and termination of employees as needed and in accordance with company policies and procedures.
  • Support the Store Manager in leading outstanding people processes, team development, and ensuring an amazing applicant and employee experience.
  • Enforce standard procedures to maximize guest experience at the Travel Center.
  • Enforce training compliance for all Travel Center employees per company procedures and, state and federal guidelines.
  • Provide input relative to a team member's job performance and attitude during performance evaluations.
  • Monitor compliance with health and fire regulations regarding food preparation and kitchen maintenance.
  • Keep records required by government agencies regarding sanitation or food subsidies.
Coordinate assignments of cooking personnel to ensure economical use of food and timely preparation. Monitor sales, waste, and profitability. Analyze P&Ls.
Duties & Responsibilities:
  • Ensure and maintain a positive guest experience.
  • Address guest needs and work to resolve escalations. Investigate complaints when necessary.
  • Identify areas of opportunity and work to improve them or escalate appropriately to management.
  • Conduct periodic inspections to monitor quality control in food preparation, appearance, presentation, and cleanliness/sanitation of work area and equipment.
  • Develop recipes and portion specifications in accordance with product specifications, ease of preparation, established procedures, and budgetary constraints.
  • Review menu and analyze recipes to determine the cost of each, including labor and overhead.
  • Record the number, type, and cost of items sold to determine which items may be unpopular or less profitable. Suggest revisions when appropriate.
  • Lead menu planning activities including purchasing, product/recipe testing, and menu development.
  • Assist in ensuring our food services and specials remain competitive within the local market.
  • Assist in managing labor cost and productivity.
  • Assist with controlling company assets by meeting all loss prevention measures.
  • Maintain food and equipment inventories and record inventory levels. Arrange for equipment maintenance and repairs, and coordinate a variety of services, such as waste removal and pest control.
  • Assist store manager with essential store functions, i.e. store accounting, daily invoice checking, inventory control, store security, store and vehicle maintenance, etc.
  • Paperwork, reporting, and researching as needed.
  • Implement in-store promotions and specials, ensuring successful execution.
  • Uphold excellent vendor relationships.
  • Ensure a tidy and inviting appearance for Travel Center guests.
  • Ensure accurate inventory data by performing spot inventory counts and checks. Schedule and receive food deliveries, checking delivery contents to verify product quality and quantity.
  • Report all employee and/or guest incidents or accidents according to company procedure.
  • Assist with Deli Cook duties as needed.
  • Perform other related duties as assigned.

  • This is considered a safety sensitive (non-DOT) position.
Education & Experience:
  • High school diploma or equivalent required.
  • Restaurant, retail, or management experience preferred.
  • 3 years of relevant food service experience preferred.
  • Ability to acquire and maintain food service certifications.
  • Successful completion of on-the-job training required.
Physical Requirements:
The minimum physical requirements for this position include:
  • Ability to stand for an extended period of time, walk, reach, and bend to perform job duties.
  • Move and handle up to 50 pounds.
  • Walk up and down stairs through the day.
  • Ability to work up to 10-hour shifts.
