Job Description
Resident Assessments, Documentation, and Clinical Responsibilities Complete resident dietary assessments as assigned, including admission, quarterly, annual, significant change, and PPS assessments. Interview newly admitted residents and families regarding food preferences, cultural needs, dietary restrictions, allergies, and meal expectations. Educate residents regarding prescribed diets, therapeutic diets, texture modifications, and meal patterns. Visit residents routinely regarding dietary concerns, satisfaction, and nutritional needs. Document resident interviews, concerns, interventions, and progress in the medical record. Complete required quarterly, annual, and assessment documentation within established timeframes. Monitor resident meal intake, weight concerns, chewing or swallowing difficulties, and report findings to nursing, the Registered Dietitian, and the interdisciplinary team. Maintain complete knowledge and application of IDDSI standards and ensure staff adherence to prescribed textures and liquid consistencies. Coordinate with nursing staff regarding physician diet orders, changes, and clarifications. Communicate residents' food preferences, allergies, intolerances, and swallowing needs to dietary staff. Participate in resident care conferences, resident council meetings, and interdisciplinary meetings as requested. Assist in resolving dietary concerns identified during resident and family meetings. Kitchen Pod Manager Responsibilities Ensure all kitchen pod positions are adequately staffed and covered during scheduled shifts. Coordinate daily staffing assignments and reassign duties as needed to ensure meal service operations. Perform monthly audits of dietary employees to monitor performance, compliance, sanitation, and quality standards. Monitor completion of weekly and monthly cleaning schedules. Assist dietary staff during peak meal periods and provide direct support during breakfast, lunch, and supper service. Supervise tray line operations and dining room service to ensure accuracy and quality. Ensure all staff follow standardized recipes and portion control procedures. Serve as the department resource person for daily operational issues and problem-solving. Department Operations Assist with menu implementation and special diet preparation. Maintain standardized recipes and ensure compliance with food production procedures. Provide opportunities for resident input regarding menus and food service operations. Collaborate with other departments to coordinate meals and refreshments for special events, family functions, and activities. Assist with food ordering, inventory control, supply management, and storage practices. Monitor department costs, supplies, and inventory usage. Report maintenance concerns involving kitchen equipment and facilities. Make recommendations regarding equipment replacement and operational improvements. Demonstrate willingness to perform cook, prep cook, and dietary aide duties as needed. Staff Leadership and Education Assist with hiring, orientation, training, and scheduling of dietary employees. Educate staff regarding therapeutic diets, food safety, infection prevention, IDDSI standards, and resident preferences. Provide ongoing coaching and performance feedback to dietary staff. Promote teamwork and positive communication among all departments. Regulatory and Compliance Responsibilities Maintain awareness of infection prevention practices and food safety regulations. Participate in QAPI activities, audits, and survey preparation. Ensure compliance with resident rights, HIPAA, abuse prevention, and corporate compliance policies. Attend required in-services and continuing education programs. Maintain Certified Dietary Manager credentials or actively pursue certification if applicable.
