- Ability to properly wash, sanitize, and store all dishes, utensils and cooking equipment.
- Assist in tray assembly and deliver carts to the appropriate nursing or dining areas.
- Dispose of refuse according to departmental policy and procedures.
- Assemble and deliver floor supplies according to the posted standards.
- Put food and supplies away following the correct rotation (first in, first out).
- Ability to prepare all foods according to the menu and the standardized recipes in a safe, efficient, and sanitary manner.
- Ability to ensure the proper preparation, portioning and serving of foods as indicated on the spreadsheets and the recipes.
- Perform hand hygiene at appropriate times, including before food handling, after glove removal, and after contact with potentially contaminated surfaces.
- Wear appropriate PPE including gloves and hairnets; don and doff PPE correctly based on assigned dietary tasks.
- Follow Enhanced Barrier Precautions (EBP) when serving residents with wounds, indwelling devices, or multidrug-resistant organisms (MDROs).
- Identify and serve trays according to dietary restrictions, allergies, and texture modifications.
- Offer residents fluids regularly, monitor hydration status, and report refusals or at-risk behavior (e.g., dysphagia).
- Ensure accurate portion sizes and plating procedures using deli sheets, utensils, and scoops—no bare-hand contact with ready-to-eat foods.
- Record and maintain food temperatures during trayline service (start, middle, end) and ensure holding temperatures meet regulatory standards.
- Clean and sanitize high-touch areas, trayline equipment, beverage stations, and carts between uses per posted cleaning schedules.
- Assist with dietary-related documentation including cleaning logs, temperature logs, and resident satisfaction checklists.
- Respond appropriately to foodborne illness outbreaks or emergency scenarios (e.g., power outages, supply shortages).
- Follow posted menus and substitutions policy, ensuring nutritional equivalence for all resident meals.
- Promote resident dignity by greeting by name, offering meal choices, and assisting discreetly with feeding or tray adjustments.
- Store all cleaning supplies, chemicals, and utensils according to TFER rules, maintaining labeled containers and SDS accessibility.
- Maintain kitchen and storage areas in compliance with state sanitation codes (e.g., food rotation, pest control, trash disposal).
- Demonstrate knowledge of the "Big 9" allergens and avoid cross-contact with designated prep areas and equipment.
- Assist in the preparation and labeling of snacks, supplements, and adaptive utensils as prescribed.
- Participate in in-service training and competency rechecks as scheduled by the Dietary Manager.

Ability to maneuver and lift 50 lbs. Reliability, trustworthiness and consistency with regard to attendance is extremely important to this job. The ability to regularly and timely attend work, cooperative and politely work and deal with others, and to effectively multi-task and work in a stressful environment are also essential functions to this job.STATEMENT
