Job Description
The Certified Dietary Manager (CDM) oversees the daily operations of the dietary department in a skilled nursing facility, ensuring that residents receive nutritious, safe, and appealing meals in accordance with physician orders, regulatory standards, and individual care plans. Key Responsibilities 1. Dietary Operations Management Plan, organize, develop, and direct the overall operation of the dietary department Ensure meals are prepared and served in accordance with standardized recipes and therapeutic diets Maintain proper food storage, handling, and sanitation procedures 2. Regulatory Compliance Ensure compliance with CMS, Wisconsin Department of Health Services (DHS) , and local health department regulations Prepare for and participate in state surveys and inspections Maintain accurate records, including meal intake, sanitation logs, and temperature logs 3. Nutrition & Resident Care Collaborate with a Registered Dietitian to implement resident nutrition care plans Monitor residents' nutritional status and dietary needs Ensure special diets (e.g., diabetic, low sodium, texture-modified) are followed 4. Staff Supervision & Training Hire, train, schedule, and supervise dietary staff Conduct performance evaluations and ensure staff competency Promote a culture of safety, sanitation, and resident-centered care 5. Budget & Inventory Control Manage food and supply budgets Order food and kitchen supplies while minimizing waste Conduct inventory and ensure cost-effective operations 6. Quality Assurance & Improvement Participate in Quality Assurance and Performance Improvement (QAPI) programs Address resident and family concerns related to food services Continuously improve meal quality and service satisfaction
Qualifications Required:
Certified Dietary Manager (CDM) credential through Association of Nutrition & Foodservice Professionals (ANFP) Food Protection Manager certification (e.g., ServSafe) Knowledge of long-term care regulations and dietary practices Minimum 1-3 years of food service management experience (healthcare preferred)Preferred:
Experience in a skilled nursing or long-term care facility Familiarity with electronic health records (EHR) systems Culinary or nutrition-related degreeSimilar jobs in Greendale, WI
