Project background:
The Moore Family Center's Nutrition in Medicine initiative at Oregon State University ( OSU ) aims to strengthen practical, evidence-based nutrition science competencies among the next generation of health practitioners. This initiative includes medical practitioner-led workshops, peer-to-peer education, and advocacy efforts that promote evidence-based nutrition as a core component of patient care for chronic disease prevention. This internship is a career development opportunity designed for pre-health students interested in pursuing medicine, dentistry, physician assistant studies, nursing, physical therapy, pharmacy, or related allied health professions. Interns will develop expertise in nutrition science as it relates to medical practice and diet-related chronic disease prevention while gaining valuable experience in scientific communication, literature review, health education, public speaking, program development and peer engagement. With guidance from Moore Family Center staff and a graduate student mentor, Nutrition in Medicine interns will: Develop a literature review of nutritional considerations relevant to their selected medical discipline, particularly in relation to diet-related chronic disease. Develop five culinary medicine workshops focused on a selected medical discipline (guided by literature review) incorporating a hands-on cooking component and mini-lecture. Work closely with Moore Family Center staff and a graduate student mentor to assist with planning, implementation, and promotion of the Nutrition in Medicine initiative designed for pre-med and allied health students at OSU . Successful candidates will gain the following learning outcomes : (1) students will develop practical skills in nutrition education and experiential learning; (2) critically evaluate and summarize scientific literature related to nutrition and medicine; (3) gain experience coordinating educational and culinary education programming; (3) strengthen leadership, communication, and teamwork skills, including adherence to scope of practice in medicine; (4) build confidence translating nutrition science into real-world, practical applications; (5) enhance professional preparation for careers in healthcare and medicine. In this position, students learn and build vital career-readiness skills in the primary areas below: Communication, Teamwork, Leadership, and Career & Self-Development Position Duties Workshop Development and Delivery (40%) - Develop and deliver five student-focused Nutrition in Medicine culinary medicine workshops around selected topics; create educational materials and interactive learning activities, including a hands-on cooking component; collaborate with project staff to ensure scientific accuracy of educational materials and educational quality for the workshop. Nutrition in Medicine Research (30%) - Select a medical or allied health specialty area of interest (e.g., endocrinology, pediatrics, oncology, gastroenterology, family medicine, sports medicine, dentistry, women's health, immunology, or related fields); conduct a guided literature review examining nutrition-related considerations within the selected specialty; identify evidence-based dietary strategies relevant to chronic disease prevention and patient care; meet regularly with supervisor and mentor to discuss research findings and project progress. Peer Education and Outreach (20%) - Serve as a student ambassador for the full Nutrition in Medicine initiative promoting nutrition literacy among pre-health and allied health students; assist with recruitment and promotion efforts through tabling events, classroom outreach, student organizations, and campus events; encourage student participation in Nutrition in Medicine events and workshops and educational opportunities. Program Support and Evaluation (10%) - Assist with workshop logistics and event coordination; support participant engagement efforts; collect and summarize participant feedback and evaluation data; contribute ideas for strengthening nutrition education among future healthcare professionals at OSU . Additional Required Qualifications Current Oregon State University undergraduate student Pursuing a pre-health, pre-medical, pre-dental, pre-nursing or other allied health academic pathway currently outside of nutrition Strong interest in healthcare, medicine, public health, nutrition or chronic disease prevention Excellent written and verbal communication skills Ability to work independently and collaboratively Strong organizational skills and attention to detail Willingness to engage in public speaking and peer education activities Preferred (Special) Qualifications Preference will be given to incoming freshman and sophomores, but juniors and seniors are also encouraged to apply Previous experience in student leadership, tutoring, peer mentoring, teaching, outreach or health education Interest in nutrition science and its application within healthcare settings Willingness to declare the Nutrition Science Minor during the internship period as part of their professional development and commitment to advancing nutrition literacy in healthcare Working Conditions / Work Schedule Professional Development Benefits:
