  • Old Greenwich, CT Birch Bakehouse is a locally owned Northern European-inspired bakehouse, gourmet pantry, and event space that opened in Old Greenwich in February 2025.
We combine premium ingredients, organic and local when possible, with small-batch production to ensure that every item we offer is crafted with quality. We are adding to our team of thoughtful, passionate, hard-working over-achievers, and would love for you to join us! Position Overview The Overnight Bread Baker is responsible for preparing, baking, and finishing all breads and morning pastries, as well as setting up the kitchen for a smooth front-of-house opening. As a key holder, this role requires strong accountability, attention to detail, and the ability to manage the bakery independently during early hours. Key Responsibilities Prepare, proof, and bake all breads according to Birch Bakehouse standards Execute daily bake-off of croissants, pastries, and other morning items Ensure consistency, quality, and proper timing of all baked goods Assemble and prepare food items needed for front-of-house service Organize and stage all products for the opening team Maintain cleanliness and organization of the kitchen workspace, including proper storage of ingredients and equipment Monitor inventory levels and communicate needs to management Open the bakery and act as a responsible key holder during shifts Qualifications Prior professional baking experience required (bread experience strongly preferred) Ability to work overnight/early morning shifts (typically starting between 1-3 AM) Strong time management and ability to work independently High attention to detail and consistency Comfortable following recipes and production schedules in a fast-paced environment Dependable, punctual, and trustworthy Food Handler's Certificate is required What We're Looking For Someone who takes ownership of their work and the space A calm, focused presence during early hours Pride in producing high-quality, small-batch products A team player who sets up others for success Compensation & Schedule Competitive hourly rate based on experience Overnight shifts, weekends required Growth opportunities within a growing bakery
