Job Description

Position Summary Bourke Street Bakery is seeking an experienced and hands-on Overnight Bakery Production Supervisor to lead our overnight production team. This role is responsible for overseeing the preparation, baking, and packaging of our artisan breads, pastries, and bakery products while ensuring the highest standards of quality, food safety, and operational efficiency. The ideal candidate is a strong leader who thrives in a fast-paced production environment, has a passion for artisan baking, and can motivate a team to consistently deliver exceptional products for our retail and wholesale customers.
Schedule:
Overnight shifts, including weekends and holidays as required. Key Responsibilities Production Operations Supervise and coordinate overnight bakery production to meet daily production schedules and customer demand. Ensure all products are prepared and baked according to Bourke Street Bakery recipes and quality standards. Monitor product consistency, appearance, and freshness throughout the production process. Adjust production priorities as needed to accommodate changing business needs. Team Leadership Lead, coach, and support the overnight bakery team, fostering a positive and productive work environment. Assign daily tasks and ensure team members understand production goals and expectations. Train new employees on bakery procedures, food safety, and company standards. Promote teamwork, accountability, and continuous improvement. Quality & Food Safety Maintain compliance with all food safety, sanitation, and health regulations. Conduct regular quality checks and address any production issues promptly. Ensure proper handling, storage, labeling, and rotation of ingredients and finished products. Uphold a clean, organized, and safe production environment. Inventory & Equipment Monitor ingredient and supply levels and communicate shortages to management. Ensure bakery equipment is operated safely and maintained properly. Report equipment malfunctions and coordinate repairs when necessary. Minimize waste through effective inventory management and production planning. Administrative Duties Complete production reports and shift documentation accurately. Communicate effectively with bakery management and incoming day-shift teams. Assist with labor scheduling and staffing needs as directed. Support the implementation of operational improvements and company initiatives. Qualifications 3+ years of bakery production experience, preferably in an artisan or high-volume bakery. Previous supervisory or team leadership experience preferred. Strong understanding of bread and pastry production processes. Knowledge of food safety and sanitation standards. Excellent organizational, communication, and problem-solving skills. Ability to work independently and make sound decisions under pressure. Comfortable working overnight shifts and flexible scheduling. Physical Requirements Ability to stand and walk for extended periods. Ability to lift and carry up to 50 pounds. Comfortable working in a fast-paced production environment with exposure to heat, flour, and bakery equipment. Ability to perform repetitive tasks while maintaining attention to detail.
