Artisan Bread Baker Bread Street Boys Plano, TX Job Details Part-time | Full-time $20 - $25 an hour 3 hours ago Benefits Employee discount Qualifications Bakery Food handling Culinary experience Baking Food industry Food preparation Food safety Restaurant experience Full Job Description Job Summary We are seeking a skilled Bread Baker to join our team, specializing in the creation of handmade bread products at a wholesale bakery. The ideal candidate will have experience working with dough, especially using artisan bread baking techniques. This is a late night/early morning shift position. Responsibilities 1. Dough Production & Bread Baking Prepare, mix, and knead doughs using natural leavening methods (e.g., sourdough starters). 2. Ingredient Management Scale ingredients precisely according to formulas and adjust for batch size as needed. Maintain and feed sourdough starters or pre-ferments on a schedule. Identify and report inconsistencies in flour quality or other raw materials. 3. Quality Control Ensure all bread meets high standards for taste, texture, appearance, and shelf life. Troubleshoot issues with dough development, proofing, or baking and propose solutions. Taste test and evaluate products regularly for consistency. 4. Sanitation & Cleanliness Follow all food safety standards and maintain a clean and organized workstation. Clean equipment (mixers, proofers, ovens) thoroughly after each use. Properly store all ingredients and baked goods to prevent waste or contamination. 5. Teamwork & Communication Communicate with team members to coordinate timing, dough availability, and oven use. Assist in training or mentoring junior bakers or assistants as needed. Work collaboratively with other departments 6. Scheduling & Production Planning Help plan and prioritize daily and weekly production based on wholesale/retail demand. Maintain awareness of proofing and baking schedules to ensure on-time delivery. Occasionally assist in developing or refining formulas and production timelines. Monitor fermentation times and adjust based on temperature, hydration, and dough condition. Shape a variety of artisan breads (e.g., boules, focaccia, baguettes, ciabatta, sourdough bread) consistently and skillfully. Score and bake loaves using steam-injected ovens or deck ovens for optimal crust and crumb. Experience Ability to work with dough. Background in the food industry, particularly within a kitchen environment. Knowledge of food safety practices and proper food handling techniques. Some culinary skills with the ability to bake various types of goods. Experience in catering is a plus but not required. A creative mindset with a passion for baking and culinary arts.
