Supervise, train, and manage campus food service operation. Ensure that appropriate quantities of food are prepared and served. Meet time constraints set by menu requirements established by Food Service Administration. Meet health codes. Job Summary:
Major Responsibilities and Duties:
Cafeteria Management Assist cafeteria manager in developing and implementing daily work schedules and food production records. Direct daily activities in the kitchen and cafeteria. Maintain all accurate reports of daily production, and activity records. Supervise and train employees at the campus, promoting efficiency, employee morale, and teamwork. Prepare quality food according to a planned menu of tested, uniform recipes. Serve food according to meal schedule, departmental policies, and procedures. Practice and promote portion control and proper use of leftovers. Supervise safe storage and handling of food items and supplies. Maintain a clean and organized storage and kitchen area. Use appropriate personal protective equipment as directed my supervisor. (i.e. rubber gloves, oven mitts, heat sleeves, cutting gloves, goggles, aprons, etc.). Safety and Sanitation Operate tools and equipment according to prescribed safety standards Maintain food production that ensures the safety and quality of food according to policies, procedures, and department requirements Keep garbage collection containers and areas neat and sanitary Correct unsafe conditions in work area and report any conditions that are not correctable to supervisor immediately Maintain personal appearance and hygiene Other Assist the cafeteria manager in production forecasting and preparing supply orders. Maintain daily food production records Promote teamwork and interaction with fellow staff members Maintain confidentiality Demonstrate behavior that is professional, ethical, responsible, and exemplifies the SMSD behaviors Handle and record cashier functions accurately, if assigned Assumes responsibility for the operation of the cafeteria in the absences of the cafeteria manager. Regular attendance is required. Perform all other duties as assigned by supervisor
Supervisory Responsibilities:
Supervise and evaluate one or more food service workers assigned to campus cafeteria
Qualifications:
Education/Certification:
High school diploma or GED Food Manager Certification Maintain 10 hours Continuing Education annually
Special Knowledge/Skills:
Ability to understand food preparation and safety instructions Ability to manage personnel Effective planning and organizational skills Working knowledge of kitchen equipment and food production procedures Ability to operate large and small kitchen equipment and tools Ability to perform basic arithmetic operations Effective organizational, communication, and interpersonal skills
Experience:
Completion of Food Manager Certification course before or during the first 30 days as manager. Cafeteria or restaurant experience (Preferred)
Equipment Used:
Large and small kitchen equipment and tools including electric slicer, mixer, pressure steamer, sharp cutting tools, oven, dishwasher, and food and utility cart
