BBQ PRODUCTION BUTCHER

Every perfectly smoked brisket, every rack of ribs, every house-made sausage link starts with the craft of a skilled butcher. WHAT YOU'LL BE DOING
Trimming briskets, pork ribs, and pork butts to Little Miss BBQ standards Producing house-made sausage from scratch Hitting daily production schedules while monitoring yields and minimizing waste Following FIFO, food safety, and sanitation standards — without being reminded Organizing, labeling, and rotating inventory with precision Keeping your workstation clean and inspection-ready Working alongside Pit Masters and Kitchen Leadership to support daily operations
WHAT WE'RE LOOKING FOR
Hands-on experience with meat fabrication, trimming, or butcher shop operations Strong knife skills and an eye for quality — you know what good looks like Ability to handle high volumes without cutting corners Dependable, organized, and self-motivated — no babysitting required Comfortable on your feet for full shifts and able to lift up to 50 lbs Available for early morning shifts and weekends
YOU'LL STAND OUT IF YOU HAVE
High-volume butcher or meat processing experience Sausage-making experience USDA, HACCP, or food safety certification Background in a restaurant commissary, butcher shop, or meat processing facility
