Position Summary We are seeking a passionate and responsible Meat Cutter/ Butcher to join our team at Wagyu Factory Brea. This role is a key part of our back-of-house operations, ensuring excellent food quality, efficiency, and adherence to company standards.

Start Date:
Upon onboarding completion. All required pre-employment notices and documents will be provided at or before the start date, as required by law. Key Responsibilities Cut, butcher, portion, and prepare a variety of meats, poultry, and seafood according to restaurant standards, recipes, and portion guidelines. Properly handle, store, and rotate meats to maintain freshness and prevent cross-contamination Classify, portion, and prepare beef according to product standards and grades, such as A5 Wagyu, Australian
M9+, U.S.
Prime, and other premium meats. Assist with receiving meat deliveries, checking product quality, verifying quantities, and reporting inventory or quality issues to management. Maintain cleanliness and sanitation of cutting boards, knives, meat saws, grinders, storage areas, and workstations. Follow food safety procedures, sanitation standards, temperature control requirements, SOPs, and company policies. Communicate clearly with kitchen staff, management, and teammates to support smooth daily operations. Be punctual, reliable, organized, and able to work efficiently in a fast-paced restaurant environment. Qualifications Previous meat cutting, butcher, kitchen prep, or related restaurant experience preferred. Knowledge of beef cuts, meat grading, Wagyu products, and safe butchering practices preferred. Ability to use knives, meat saws, grinders, slicers, and other cutting tools safely and properly. Strong attention to detail, cleanliness, portion accuracy, and product consistency. Strong team communication and coordination skills. Ability to follow recipes, portion guidelines, food safety procedures, sanitation standards, and company policies. Flexible availability, including early mornings, evenings, weekends, holidays, and changing schedules as needed. Ability to stand, bend, reach, lift, carry, and work in refrigerated or cold prep areas for extended periods. Ability to lift up to 40 lbs, with or without reasonable accommodation. Possession of, or ability to obtain upon hire, a California Food Handler's Card. Must be authorized to work in the United States.
