Smoker Prime Catering and Events San Jose, CA Job Details Part-time | Full-time From $20 an hour 9 hours ago Qualifications Food production Food handling Pre-cooking preparation Attention to detail Time management Full Job Description Smoker / Pit Cook Smoking Pig BBQ Restaurant & Bar Job Summary The Smoker (Pit Cook) is responsible for preparing, smoking, and maintaining all BBQ meats to ensure consistent quality, flavor, and tenderness. This role requires strong attention to detail, time management, and strict adherence to recipes, temperature controls, and food safety standards. Responsibilities Trim, season, and prepare meats according to recipe and portion standards Follow all marinating, seasoning, and prep guidelines accurately Operate and monitor smokers safely and efficiently Maintain proper cooking temperatures, smoke levels, and cook times Load, unload, and manage meats according to production schedules Adjust airflow, fuel, and heat to ensure consistent product quality Monitor internal meat temperatures and ensure proper doneness Maintain consistent texture, tenderness, and presentation of all BBQ items Rest, hold, and store meats according to food safety standards Communicate product readiness and availability with kitchen team Follow all food safety, sanitation, and hygiene guidelines Maintain proper labeling, storage, and FIFO rotation practices Keep smoker area clean, organized, and sanitary at all times Track meat usage and communicate inventory needs or shortages Follow daily production and prep schedules to meet demand Minimize waste and ensure efficient product usage Clean and maintain smokers, grills, and related equipment Safely handle wood, charcoal, and other fuel sources Report equipment issues or safety concerns immediately Qualifications Prior BBQ pit, smoker, or kitchen experience preferred (not required) Strong attention to detail and consistency Ability to work in a hot, fast-paced environment Good time management and communication skills Reliable, punctual, and able to follow recipes and direction Work Environment This role involves working in a high-heat outdoor or semi-outdoor BBQ environment with exposure to smoke, fire, and varying weather conditions. Must be able to stand for long periods and lift up to 50 lbs.
