Sausage Stuffer Job Tasks:
Seam butcher, trim, bone, and cut various meats (beef, pork, poultry) to achieve the exact meat-to-fat ratios required for specific recipes. Wrap, weigh, label and price cuts of meat. Attend to customers' needs, explain, and offer different cuts. Prepare and place meat cuts and products in display counter, so they will appear attractive and catch the shopper's eye. Prepare special cuts of meat ordered by customers. Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry to prepare meat in cooking form. Estimate requirements and order or requisition meat supplies to maintain inventories. Receive, inspect, and store meat upon delivery, to ensure meat quality. Shape, lace, and tie roasts, using boning knife, skewer, and twine Knowledge of meat preparation from cooking/prepared foods standpoint Experience in food safety and regulatory complianceRecord-keeping:
Equipment maintenance; cleaning schedules; HACCP protocols; Production logs; Regulatory compliance. Clean and sanitize equipment and work areas. The ability to develop new meat-processing programs A professional demeanor, and an enjoyment of interactions with customers Contributing to our culture of hospitality, welcome, and community. The ability to work a flexible schedule, including some Saturdays Other duties as assigned.Sanitation & Safety:
Meticulously clean equipment and workstations while adhering to strict OSHA, HACCP, and food safety standards. [1, 2, 3, 4, 5, 6, 7]Physical Requirements:
Standing, Lifting, Bending, must be able to lift up to 50 plus lbs. routinely Weigh and measure ingredients precisely, and operate meat mixers and grinders to evenly distribute spices, cures, and binders. Operate grinding and stuffing machinery to fill natural casings to standard sizes and shapes. Monitor temperatures and operate smokehouses, cooking vats, or curing rooms to safely process, cook, and age the final products.Job Type:
