Position Summary The Butcher / Meat Cutter is responsible for the preparation, cutting, trimming, and packaging of high-quality meats in accordance with Srodek's standards of excellence. This role requires a skilled and detail-oriented individual who takes pride in their craft and is committed to delivering superior products and exceptional customer service consistent with our Polish and European food traditions. Key Responsibilities Prepare and manage raw meat counter for retail sale. Check products to make sure they meet quality standards. Must follow company hygiene procedures. Cut, trim, bone, and prepare meat products including beef, pork, poultry, and specialty cuts in accordance with company standards and customer requests. Operate and maintain meat cutting equipment including band saws, slicers, grinders, and knives in a safe and sanitary manner. All machines and equipment must be kept in good repair and must be handled with care at all times. Must be fully aware of the company controlling and food preparation procedures. Package, label, and price meat products accurately for display and sale. Maintain proper rotation of meat inventory following FIFO (first in, first out) procedures to ensure freshness and minimize waste. Maintain and update the order guide and date logs. Lead by example utilizing a "hands-on" approach to managing raw meat counter. Prepare and manage items for Gourmet to Go Counter from raw counter. Assist customers with product selection, special orders, and inquiries in a courteous and knowledgeable manner. Collaborate with fellow team members to ensure efficient department operations and a positive work environment. Follow all company policies, food safety guidelines, and applicable health regulations. Perform additional duties as assigned by management. Qualifications & Requirements Prior experience as a butcher, meat cutter, or in a similar meat department role preferred; willingness to train the right candidate will be considered. Previous experience in field with preferred food management safety course up to date. Knowledge of meat cuts, preparation techniques, and food safety standards. Ability to operate meat cutting equipment safely and efficiently. Strong attention to detail and commitment to product quality. Excellent customer service skills with a friendly, professional demeanor. Reliable, punctual, and a strong team player. Able to understand and complete departmental needs and accommodations. Familiarity with Polish or European specialty meats and products is a plus but not required. Physical Requirements Ability to lift and carry up to 60 pounds regularly. Comfortable working in cold/refrigerated environments for extended periods. Prolonged standing, bending, and use of hands and wrists.
