Objective:
A profitable department.
Essential Function:
Expert ability to produce all cuts of meat. Manage Meat Department to achieve or exceed budget projections in gross profit, sales, supplies, and labor percent in a sanitary, pleasing atmosphere. Stocking and rotating product in a timely, appropriate manner. Efficient handling of product to meet the demands of the customers. Servicing customers in a timely, friendly manner. Requires standing, bending and heavy lifting. Must be a minimum of 21 years of age.
Basic Functions:
1) Follow directives of Store Director and Meat Director. 2) Provide the best product and service possible. 3) Maintain a friendly, professional attitude. 4) Interview, hire, and train Office associates. 5) Monitor and evaluate associates on a regular basis. 6) Process terminations in a timely manner. 7) Motivate, schedule and direct subordinates. 8) Control and purchase inventory. 9) Enforce Company policies and procedures. 10) Follow Company Safety Standards.
Specific Skills:
1) Rotation of product. 2) Written communication in preparing a cutting list for each day. 3) Invoice verification. 4) Maintain and submit required records and reports. 5) Sales projections. 6) Expert ability to produce all cuts of meat. 7) Delegation - follow-up. 8) Customer and associates relations. 9) Assist in all phases of production. 10) Responsible for compliance with Health Department standards. 11) Monitor competition and maintain competitive pricing.
Machinery/Equipment:
Safe usage, proper storage and cleaning of: Tenderizers, Bone Scraper, Power Saw, Meat Slicer, Grinder, Wrapper, Power Washer, Knives, Scales, Cleaning Agents, Sink, Mixer, Power Jack, Hand Jack, Forklift, Computer, Trash Compactor, Cardboard Baler. Must know proper cleaning and sharpening of all blades.
