Responsibilities Lead the preparation and presentation of sushi and other Japanese dishes, maintaining authentic flavors and artistic plating standards Supervise kitchen staff, including training, scheduling, and ensuring adherence to food safety and sanitation protocols Manage inventory control, including ordering supplies, monitoring stock levels, and minimizing waste Oversee food production processes to ensure consistency, quality, and timely delivery during service hours Collaborate with restaurant management on menu planning, special event catering, and seasonal updates Enforce strict food handling procedures and safety regulations to uphold health standards Maintain a clean, organized kitchen environment conducive to efficient workflow and team collaboration Requirements Proven culinary experience in sushi preparation and Japanese cuisine, with a strong background in fine dining settings Supervising or team management experience within a restaurant or hospitality environment Knowledge of food safety standards and best practices in food handling and sanitation Experience with inventory management, food production, and kitchen operations management Familiarity with banquet service, catering, and large-scale food service operations is a plus Strong leadership skills with the ability to motivate and develop team members Excellent communication skills and the ability to work efficiently under pressure in a fast-paced environment Passion for culinary innovation, hospitality excellence, and delivering memorable guest experiences
