Head Chef at Masala Republic — South Indian & Hyderabadi Cuisine

  • "Competitive, commensurate with experience" About Masala Republic Masala Republic brings the depth and soul of South Indian cooking to Fremont, with Hyderabadi cuisine at the heart of our menu.
From slow-cooked dum biryani to the layered heat of a proper mirchi ka salan, we're building a kitchen that treats these dishes with the respect and precision they deserve. We're part of the Wok & Curry Group, a hospitality company committed to authentic regional Indian dining. The Role We're looking for a Head Chef who lives and breathes Hyderabadi & South Indian cooking and has the leadership to run a full kitchen. You'll own the menu, the line, and the standards — translating traditional technique into consistent, high-volume execution while keeping quality uncompromised. What You'll Do Lead daily kitchen operations: prep, line execution, plating, and service across all stations Own and evolve the menu, with Hyderabadi & South Indian specialties Maintain authenticity of regional spice blends, masalas, and slow-cooking (dum) techniques Hire, train, schedule, and mentor kitchen staff; build a strong line culture Manage food costs, portioning, inventory, and vendor relationships to hit margin targets Enforce food safety, sanitation, and health-code compliance ([state] standards) Partner with ownership/management on specials, seasonal menus, and events What We're Looking For 5+ years of professional kitchen experience, with demonstrated mastery of Hyderabadi cuisine Strong command of South Indian cooking broadly (tiffin, curries, regional breads/rice) Prior experience as a Head Chef, Executive Chef, or strong Sous Chef ready to step up Proven ability to run a high-volume kitchen with consistent quality Leadership skills: hiring, training, and managing a kitchen team Working knowledge of food costing, inventory, and kitchen P&L Food handler / manager certification (or ability to obtain) per local requirements Authorized to work in the U.S. Nice to Have Experience opening a restaurant or launching new menus Familiarity with Indo-Chinese / pan-Indian items for menu breadth Multilingual (a plus for kitchen communication) To Apply Send your resume and a short note about your experience with Hyderabadi cuisine to bala@wokandcurrygroup.com.
