Experienced Sushi Chef for New Upscale Sushi Restaurant We are opening an exciting new high-end Japanese sushi restaurant in the heart of Glendale (Brand Blvd, near the Americana). We are currently assembling our opening culinary team and are seeking a skilled, passionate Sushi Chef to help set the standard for our kitchen and deliver an exceptional dining experience. The Role As a Sushi Chef, you will be an integral part of our opening culinary team. You will focus on executing high-quality sushi preparation, maintaining immaculate station presentation, and ensuring absolute consistency across our premium sushi menu.
Key Responsibilities:
Expert Preparation:
Execute precision knife work for sashimi, nigiri, and maki with high speed, accuracy, and artistry.
Quality Control:
Maintain exceptional quality, absolute freshness, and beautiful presentation standards for every dish leaving the sushi bar.
Operations:
Manage station inventory, practice proper ingredient handling, rotate stock efficiently, and minimize waste.
Sanitation:
Strictly adhere to health department food safety, cleanliness, and sanitation regulations (HACCP knowledge is a plus).
Collaboration:
Work cohesively with the kitchen and front-of-house teams to ensure a smooth, premium guest experience.
What We Are Looking For Experience:
Minimum 3 years of professional experience working strictly as a Sushi Chef in a high-volume or upscale Japanese kitchen.
Skill Set:
Strong mastery of fish butchery, traditional sushi preparation, and signature sauce making. Ability to handle both high-volume Sushi and Maki stations seamlessly.
Attitude:
A professional, reliable, and team-oriented culinarian who thrives in a fast-paced environment and stays calm under pressure.
Passion:
A genuine love for Japanese cuisine, hospitality, and creating memorable experiences for our guests.
Availability:
Full-time availability, including nights, weekends, and holidays.
