Job Description
Hand-Pulled Noodle Chef — Dolan's Uyghur Cuisine (Irvine) Dolan's Uyghur Cuisine is looking for a skilled Hand-Pulled Noodle Chef to join our kitchen team at our Irvine location. We are one of the few authentic Uyghur restaurants in Southern California, and our hand-pulled noodles — laghman — are central to who we are. This is a hands-on role for someone who takes pride in traditional technique and consistent quality. What You'll Do Hand-pull noodles to order with consistent texture, thickness, and elasticity Prepare doughs and ingredients according to our recipes and quality standards Maintain production pace during peak service hours without sacrificing quality Keep your station clean, organized, and compliant with food safety standards Support kitchen staff with technique guidance as needed Coordinate with the kitchen team on prep needs and inventory What We're Looking For Hands-on experience with hand-pulled noodles or similar dough-based techniques (laghman, la mian, or equivalent) Ability to work efficiently in a fast-paced, high-volume kitchen Solid understanding of food safety and proper handling procedures Reliable, consistent, and detail-oriented Experience in a restaurant kitchen setting required; Uyghur, Central Asian, or Chinese noodle background preferred Team player who can also work independently without constant supervision Details Full-time position Competitive pay based on experience
