Executive Sous Chef Paso Catering Co. | Paso Robles, CA Paso Catering Co. is seeking a talented, dependable, and highly self-motivated Executive Sous Chef to join our growing catering and events company based in Paso Robles, California. We specialize in elevated weddings, winery events, private chef experiences, seasonal catering, and chef-driven celebrations across California's Central Coast. This role is ideal for an experienced chef who thrives in independent work, enjoys production-focused kitchen environments, and takes pride in organization, efficiency, and consistently executing high-quality food with minimal supervision. Position Overview The Executive Sous Chef will work directly alongside the Executive Chef during an initial training period to learn recipes, systems, production standards, and event execution. After training, this role becomes largely independent and production-driven. A significant portion of the job will involve working alone in the kitchen, managing prep for multiple upcoming events, prioritizing production timelines, and ensuring all food is executed accurately, efficiently, and on schedule. This is a hands-on production role with a strong emphasis on independence, time management, and self-direction.
Responsibilities include:
Independent catering production and food preparation Managing and prioritizing prep for multiple upcoming events Staying ahead of production schedules and deadlines Maintaining recipe consistency and presentation standards Kitchen organization, cleanliness, and food safety compliance Packing, loading, and event preparation Onsite event execution as needed Event setup, breakdown, and cleanup Supporting menu preparation and quality control Over time, increasing responsibility will be transferred into this role with the goal of developing into a Chef de Cuisine leadership position within the company. The Executive Chef will gradually transition toward logistics, planning, and administrative operations while this role takes a larger lead in culinary production and event execution. Ideal Candidate We are looking for someone who is: Highly self-motivated and able to work independently for extended periods Organized, efficient, and detail-oriented Able to prioritize multiple tasks and deadlines without constant supervision Calm under pressure and adaptable in fast-paced environments Passionate about quality food and hospitality Experienced in restaurants, catering, banquets, or production kitchens Comfortable working events from start to finish including setup and cleanup Flexible with weekends and seasonal event schedules Experience with weddings, winery events, private chef work, or large-format catering is highly preferred.Position Details Location:

Full-time position based on a 32-hour work week (typically 4 x 8-hour shifts, with flexibility for event needs)Compensation:
Hourly compensation based on experience, with opportunity for overtime where applicable. This role includes a clear path toward salaried leadership (Chef de Cuisine) and profit-sharing opportunities upon advancement. Growth Opportunity This position is designed as a career path role. After a successful training and evaluation period, this role is intended to grow into a Chef de Cuisine leadership position with increased responsibility, salary, and participation in company profit-sharing.
