Our ideal candidate has experience working in busy restaurant environments while maintaining highest service, quality and sanitation standards. Job Responsibilities Guarantees that all kitchen operating procedures are met on a daily basis. Manage all kitchen employees by training, mentoring and enforcing proper conduct. Supervise the entire kitchen team to make certain that all items and recipes are made correctly. Carry out all food/equipment safety training and sanitation procedures with all staff. Manage the line alongside our Executive Chef while monitoring the flow of service and maintaining service standards. Ensures kitchen equipment maintenance and reports any facilities issues to the management team. Certifies that all products that are ordered and delivered meet restaurant standards. Must be held accountable for maintaining food budgets, labor and operating expenses. Develop and maintain vendor relationships, acquire the best price and source specific items if necessary. Administrative Schedule kitchen team while assisting and supporting payroll duties as needed. Send daily service reports, reservations logs and HR-related processes such as organization of paperwork, worker's comp and accident reports. Responsible for purchasing, receiving of product and invoice data entry. Manage inventory and costs of all kitchen supplies and products. Address staffing needs for open positions while sitting in on interviews, screening and hiring. Must keep detailed records of invoices, equipment service records, health inspection reports, etc. Skill & Requirements 3+ years of related experience required. High-volume experience required. Experience with administrative and managerial duties is required. Knowledge of techniques, methods, tools and equipment used in preparing high-quality cuisine on a large scale. Ability to be inventive and develop recipes from scratch. Proven ability in teaching and mentoring kitchen employees. Exceptional communication and supervisory skills. Manager's Food Handler's Certification required. Ability to demonstrate quick-thinking and adaptability in a constantly changing environment. Have interpersonal skills to effectively deal with all business contacts. Work varied shifts, including weekends and holidays. Exceeds in communicating both written and verbal conversation. Performs any other related duties as requested. License and access to a personal vehicle for picking up product, groceries and running general operational duties. Proficient in Google Workspace and can create documents and spreadsheets in order to optimize daily operations. Physical Demands Standing for
Long Periods:
Sous chefs spend most of their workday on their feet, often standing in one place or moving around the kitchen.
Lifting and Carrying:
There is often a need to lift heavy pots, pans and containers filled with ingredients or prepared dishes. This requires enough physical strength to lift up to 51 pounds.
Repetitive Motions:
Tasks such as chopping, slicing, stirring and plating require repetitive motions which can be physically demanding over time. Working in
Heat:
Kitchens can be hot and humid environments, especially near stoves, ovens and other cooking equipment. This requires tolerance for high temperatures.
Fast-Paced Environment:
The Sous Chef must work quickly and efficiently, especially during peak service times. This can be mentally and physically demanding.
Coordination and Dexterity:
Precision and coordination are necessary for tasks such as plating dishes and handling kitchen equipment safely.
Cleaning and Maintenance:
Keeping the kitchen clean and organized is essential. This may involve bending or kneeling while using cleaning equipment.
Endurance:
The ability to maintain energy and focus throughout long shifts, which can extend beyond standard working hours during busy periods.
Adaptability:
The Sous Chef must be able to adapt to different kitchen layouts, equipment and the demands of varying menu items.
Teamwork:
Collaboration with other kitchen staff is essential, requiring effective communication and the ability to work closely with others in sometimes crowded spaces. These physical demands highlight the challenging nature of the sous chef role, requiring both physical stamina and mental agility to succeed in a fast-paced culinary environment.
