About Old Town Truckee Old Town Truckee has been a Californian mountain town stalwart since 2016. You'll be working for Chef Brandon Dubea, founding chef of beloved Berkeley neighborhood favorite, Angeline's, and co-mentored by Beard and Michelin-recognized Chef Matt Lightner. Old Town is part of Lucky Ducky Truckee, a growing hospitality group in the Sierra Nevada. For the right person, this role is an opportunity to grow with a group that is actively expanding. The role We are looking for a Culinary Manager who leads by example — organized, present, and genuinely invested in people and food. This is a working management role: you will be on the line and you will be running the kitchen. We want someone who finds both equally satisfying. You will work closely with our Executive Chef to execute a tight, well-crafted, unfussy menu of pizza, seasonal appetizers, and composed plates. You will build and hold the standard — for cleanliness, prep, plating, and how the team shows up every shift. This role has a clear growth path. As Lucky Ducky Truckee expands into new concepts and locations, culinary leadership that has proven themselves at Old Town will have the first opportunity to grow into those openings. What you will doKitchen operations
Lead BOH team through service — line cooks, prep cooks, and kitchen support
Execute and supervise prep to standard, tasting and adjusting daily
Hold plating standards across all dishes
Maintain a clean, organized kitchen at all times — walk-in, shelves, stations, equipment
Ensure compliance with or exceed Health Department standards
Coordinate deep cleaning and routine equipment maintenance
Work with FOH to ensure proper timing through service
Ordering and inventory
Place and receive orders for produce, protein, dry goods, and supplies
Monitor and control food cost; flag variances to Executive Chef
Collect, organize, and submit invoices accurately
Team and scheduling
Build schedules 2 weeks out; manage time-off requests and staffing levels
Onboard new kitchen staff; train to standard on all stations and dishes
Run line-up and shift meetings
Provide ongoing feedback and mentorship to line cooks and prep staff
Participate in performance reviews and progressive discipline when needed
Review clock in and out for accuracy prior to payroll processing
Menu and standards
Assist Executive Chef with menu development and seasonal updates
Maintain and update recipe cards, prep guides, and training materials
Contribute ideas for efficiency, quality improvement, and waste reduction
What we are looking for
3+ years kitchen management experience in a full-service restaurant
Strong line cook foundation — you can work any station and know the menu cold
Organized and systems-minded; you build checklists and follow them
A calm, steady presence during service — you set the tone
Clear communicator with FOH and BOH alike
Experience with food cost management and ordering
Reliable and on time, every shift — this is non-negotiable
Comfortable working weekends, holidays, and the hours the job requires
