Job Description

FiftyFifty Brewing Co. Truckee Lumberyard is hiring a Sous Chef for our downtown Truckee brewpub. This is a working kitchen leadership role. You will be on the line, in prep, and in the daily details that keep service organized. We are looking for someone who can support the Executive Chef, coach cooks, protect standards, and help the kitchen stay consistent during busy services. The food is scratch-made and the pace can be fast. The right person has strong line fundamentals, communicates clearly, and is comfortable holding people accountable without creating drama. The role The Sous Chef helps lead daily BOH execution. That includes prep planning, line setup, recipe and plating standards, sanitation, inventory awareness, and service flow. You should be able to cook well, teach well, and keep your head when the kitchen gets busy. What you will do
  • Lead prep and service execution.
  • Work the line during busy periods and set the pace for the team.
  • Train cooks on builds, temps, seasoning, timing, station setup, and communication.
  • Enforce recipes, specs, pars, labeling, dating, allergen control, sanitation, and close-down standards.
  • Check food quality before it leaves the kitchen.
  • Help manage inventory, ordering, prep levels, and waste.
  • Communicate product issues, equipment problems, staffing gaps, and service concerns early.
  • Support a kitchen culture built on consistency, professionalism, and respect. Who we are looking for
  • A proven sous chef, or a strong line cook ready for the next step.
  • Comfortable leading from the line.
  • Calm under pressure.
  • Organized, detail-focused, and consistent.
  • Clear with feedback and communication.
  • Interested in scratch cooking, production planning, smoking, fermentation, cook-and-hold, and other practical kitchen systems.
  • Authorized to work in the United States. Requirements
  • 2+ years in a high-volume scratch kitchen.
  • Leadership experience preferred.
  • Able to lift up to 50 lbs and work long shifts on your feet.
  • Must maintain required food safety certifications for the role, or obtain them within the required timeframe.
  • Scheduling flexibility, including nights, weekends, and holidays.
Pay:
$54,607.42
  • $71,000.
