WELLNESS COUNTER
Wellness Counter is a refined Japanese restaurant on Pearl Street in Boulder — a sushi and chef's counter built around seasonal ingredients, premium seafood, precise technique, and warm, intentional hospitality. Our program focuses on craftsmanship, organization, ingredient quality, and consistency. We source seafood directly from Japan's Toyosu Market and work with premium domestic and international suppliers to showcase both traditional and modern Japanese cuisine. We are seeking a motivated, detail-oriented Sushi Chef to join our culinary team. This is an excellent opportunity for someone who takes pride in their craft and wants to grow within a serious culinary program built on discipline, consistency, teamwork, and hospitality.
THE ROLE
As a Sushi Chef, you will help execute our sushi program while maintaining the highest standards of product handling, cleanliness, organization, and guest experience. Because we operate a small, collaborative kitchen, the ability to work independently while supporting the broader team is essential.
WHAT YOU'LL DO
Prepare and execute nigiri, sashimi, hand rolls, maki rolls, and specialty sushi items to restaurant standards Properly handle, portion, and prepare premium seafood with attention to quality and presentation Assist with fish fabrication, portioning, and daily station setup Maintain cleanliness, organization, and station readiness throughout service Follow recipes, preparation standards, and kitchen systems consistently Monitor product quality, freshness, and inventory levels Communicate clearly with kitchen and front-of-house teams Uphold food safety and sanitation standards at all times Assist with prep production, receiving deliveries, station setup, and breakdown
WHAT WE'RE LOOKING FOR
Previous sushi chef experience required Experience with nigiri, sashimi, hand rolls, and maki rolls Strong knife skills and understanding of seafood handling Ability to work independently and reliably in a small, fast-paced kitchen Strong work ethic, organization, and attention to detail Calm and focused under pressure with a collaborative, no-ego approach Passion for hospitality, craftsmanship, and continuous learning Flexible availability, including evenings, weekends, and holidays Must be legally authorized to work in the United States
COMPENSATION
$22-$25 per hour base wage, depending on experience Participation in the restaurant's tip pool Total compensation exceeds base wage through tip-pool earnings Opportunities for advancement as the restaurant grows
