- Omakase & À La Carte We are seeking a skilled Sushi Bar Chef to execute exceptional omakase experiences and à la carte sushi offerings, utilizing traditional Japanese techniques, precise knife work, thoughtful presentation, and the highest-quality seasonal ingredients.
This role is hands-on and production-focused, reporting directly to the Executive Chef and culinary leadership team. Core Responsibilities Execute omakase and à la carte sushi dishes to established standards of quality, consistency, and presentation Follow SYC Concepts' Mission, Values, and all company policies and procedures as outlined in the Employee Handbook Prepare and break down whole fish; perform daily butchery, portioning, and yield-conscious preparation Accurately follow approved recipes, specifications, and plating standards Maintain strict portion control to minimize waste and support food cost goals Maintain cleanliness, organization, and readiness of the sushi bar and prep areas at all times Follow all health department, food safety, sanitation, and hygiene standards without exception Properly receive, store, label, rotate, and handle all products according to restaurant standards Follow daily prep lists, production plans, and station priorities for each shift Communicate clearly and professionally with chefs, servers, and support staff during service Participate in pre-shift lineups and service briefings as scheduled Assist with training junior sushi cooks or culinary staff as directed by the Executive Chef Educate front-of-house staff on menu items, ingredients, and preparation when requested Support a respectful, professional, and collaborative kitchen culture Follow direction from the Executive Chef and Sous Chef Perform additional job-related duties as assigned Position Characteristics Strong attention to detail and pride in craftsmanship Calm, focused execution during high-volume or high-expectation service Dependable, punctual, and prepared for every shift Open to feedback and committed to continuous improvement Clear verbal communication skills with kitchen and service teams Positive attitude and respect for teammates, guests, vendors, and leadership Education & Experience Minimum 2+ years experience as a Sushi Chef or Sushi Cook Omakase experience strongly preferred Experience with nigiri, sashimi, hand rolls, and raw fish handling required Culinary school or formal training preferred but not required Prior experience in sushi bars or Asian-focused restaurants required Position Characteristics Strong attention to detail and pride in craftsmanship Calm, focused execution during high-volume or high-expectation service Dependable, punctual, and prepared for every shift Open to feedback and committed to continuous improvement Clear verbal communication skills with kitchen and service teams Positive attitude and respect for teammates, guests, vendors, and leadership Education & Experience Minimum 2+ years experience as a Sushi Chef or Sushi Cook Omakase experience strongly preferred Experience with nigiri, sashimi, hand rolls, and raw fish handling required Culinary school or formal training preferred but not required Prior experience in sushi bars or Asian-focused restaurants required Tremendous career growth opportunities are absolutely on the table for those who apply!
