Role:
The Westin Westminster is seeking an experienced and organized Banquet Sous Chef to support banquet culinary operations for one of the area's busiest hotel event venues. Reporting directly to the Executive Chef, this position plays a key leadership role in the planning, preparation, and execution of banquet and catering events throughout the hotel. With over 95,000 square feet of combined indoor and outdoor meeting space , our hotel hosts corporate meetings, conventions, weddings, galas, and social events year-round. The ideal candidate has strong experience in high-volume banquet production, large-batch cooking, team leadership, and event execution while maintaining exceptional food quality and presentation standards.
Responsibilities:
Assist the Executive Chef in overseeing banquet culinary operations for meetings, conferences, weddings, and special events. Lead banquet kitchen production and execution during events and high-volume service periods. Prepare and supervise large-batch cooking while maintaining quality, consistency, and presentation standards. Supervise and support banquet cooks, prep cooks, and stewarding staff during daily operations. Review Banquet Event Orders (BEOs) and coordinate production timelines with Culinary and Banquet leadership. Ensure proper preparation, plating, portioning, and presentation of banquet menu items. Monitor food quality, labor efficiency, and waste control to support departmental financial goals. Maintain cleanliness, organization, and sanitation standards throughout banquet kitchen areas. Ensure compliance with food safety, health department, and Marriott brand standards. Assist with menu development, banquet tastings, inventory control, and ordering as assigned. Support restaurant kitchen operations when business levels require additional culinary coverage. Train, coach, and mentor culinary associates while promoting teamwork and accountability.
Qualifications:
Minimum 3 years of banquet or high-volume culinary leadership experience required. Hotel banquet experience strongly preferred. Strong background in large-scale food production and batch cooking. Previous supervisory or Sous Chef experience preferred. Excellent organizational, leadership, and communication skills. Ability to work efficiently under pressure while maintaining high culinary standards. Knowledge of food safety, sanitation, and kitchen safety procedures. Ability to stand for extended periods and lift up to 50 lbs. Flexible availability including evenings, weekends, and holidays. ServSafe certification preferred.
