Our Venues offer the best in fine and causal dinning. It is all about the experience - one-of-a-kind ambiance - and is not simply a meal but an overall dining experience! MRG is seeking an experienced Sous Chef at Republic, 39 Jermone Avenue, Bloomfield, CT. As directed by Executive Chef, ability to serve cuisine for guests in an environment with focus on client and customer service. Training and management of kitchen personnel and supervise and coordinate all related culinary activities, as directed by Executive Chef As directed by Executive Chef, assist in management and experience with control of labor costs. Assist Executive Chef with assignment of duties for staff, i.e. food prep, assigned kitchen positions, plate up during dinner service. Assist Executive Chef with weekly schedule management for all kitchen employees. Must be able to multitask and delegate tasks. Assist Executive Chef with the monitoring of culinary staff timecards daily. Assist Executive Chef with estimate of food consumption and needs for multiple weekly events, with a focus on cost control. The majority of the current menu is all made in house with a focus on fresh ingredients. Assist Executive Chef with utilizing current menus with the ability to help in the creation of new dishes as well. Assisting the Executive Chef with trends in the culinary world to offer things that are "new and different". Assist Executive Chef with the ordering of all supplies: Food items, cleaning products, cooking supplies and any other items necessary. Keeping track of kitchen expenses and reporting to Management Must show strong leadership skills. Operating a clean, safe kitchen while exceeding food quality requirements Supporting and maintaining systems Ability to create seasonal menus as directed by the Executive Chef Ordering and inventory as directed by the Executive Chef Work to control labor and food costs Basic understanding of computer skills Good communication skills Great work ethic and commitment to uncompromising quality Ability to teach and mentor all Kitchen Staff Ability to work all stations in the kitchen as necessary. Qualified Candidates must demonstrate a Highly Motivated Attitude, Genuine Passion for Culinary and Hospitality Excellence! You must have experience as a Sous Chef in a high end, high volume and fast paced restaurant.
Qualifications:
Requirements 5 years Sous Chef Experience Must be available 7 days a week throughout the year when necessary. Nights, weekends and Holidays are a must. Must be Serv Safe Certified. May be asked to work off site events, must be able to travel for these events. Must have reliable transportation. Salary based upon experience. Must be passionate about the position.
