The ideal candidate has a strong foundation in classical cold kitchen preparation, exceptional plating skills, and the ability to maintain the highest standards of quality, consistency, and sanitation in a fast-paced upscale environment. The Garde Manger is responsible for preparing and presenting cold dishes including composed salads, crudos, tartares, canapés, cold sauces, and specialty appetizers while supporting the culinary vision of the restaurant. Key Responsibilities Prepare and execute all cold kitchen menu items to fine dining standards Maintain exceptional presentation, portioning, and consistency on every plate Produce mise en place efficiently and accurately for service Prepare pickles, vinaigrettes, garnishes, and cold appetizers Ensure freshness, quality, and proper storage of all ingredients Maintain a clean, organized, and sanitary workstation in compliance with health regulations Assist with inventory management, ordering, and waste reduction Support banquet, tasting menu, and special event preparation as needed Work closely with the hot line and pastry team to ensure smooth kitchen operations Uphold all standards related to food safety, professionalism, and kitchen etiquette Qualifications 2+ years of experience in a fine dining, upscale, or high-volume culinary environment preferred Formal culinary training is a plus Strong knife skills and understanding of classical culinary techniques Experience with charcuterie, seafood preparation, and artistic plating preferred Ability to work cleanly and efficiently under pressure Strong attention to detail and organizational skills Flexible schedule including evenings, weekends, and holidays Food Handler Certification preferred Desired Attributes Passion for hospitality and culinary excellence Creative mindset with appreciation for seasonal ingredients Strong communication and teamwork skills Professional demeanor and positive attitude Commitment to consistency and continuous improvement
Pay:
$20.00 - $22.00 per hour
