Upscale, Tulum-inspired coastal Mexican cuisine Position Summary Origen is seeking a driven, creative, and highly organized Sous Chef to support the Executive Chef in leading a high-performance kitchen. This role is ideal for a culinary professional who thrives in a fast-paced, fine-dining environment and is passionate about bold coastal Mexican flavors, premium ingredients, and elevated presentation . Origen delivers a Tulum-inspired dining experience with an emphasis on fresh seafood, prime steaks, fire-driven cooking, and vibrant, shareable dishes. The Sous Chef will play a key role in maintaining the restaurant's commitment to quality, creativity, and exceptional guest experiences . Key Responsibilities Support the Executive Chef in daily kitchen operations and service execution Lead line cooks and prep team, ensuring consistency, quality, and efficiency Execute and uphold menu standards across all stations (hot line, cold, grill, garde manger) Act as Chef-in-Charge during service when the Executive Chef is not present Food Quality & Execution Ensure all dishes meet Origen's standards for flavor, presentation, and timing Maintain consistency across menu items including seafood, steaks, tacos, and shareable plates [origendunedin.com] Oversee preparation of house specialties such as fire-grilled proteins, fresh ceviches, and scratch-made components Monitor portioning, plating, and waste control Team Development Train, coach, and mentor kitchen staff to build a strong, accountable team Reinforce a culture of professionalism, urgency, and attention to detail Assist with hiring, onboarding, and performance management Kitchen Operations Maintain food cost targets through proper ordering, inventory, and waste management Assist with scheduling based on business volume Ensure compliance with all health, safety, and sanitation standards Manage prep lists, par levels, and station readiness Collaboration & Menu Execution Work collaboratively with the Executive Chef on seasonal updates and menu changes Contribute ideas that align with Origen's coastal Mexican, flavor-forward identity Support execution of special events, private dining, and rooftop service offerings Qualifications 3-5+ years of experience in a Sous Chef or senior line cook role , preferably in upscale or high-volume restaurants Strong knowledge of seafood cookery, butchery, grilling, and modern plating techniques Experience with Latin, coastal, or open-fire cuisines strongly preferred Proven leadership skills with the ability to motivate and manage a team Excellent communication and organizational abilities Food safety certification (or ability to obtain) Key Traits for Success Passion for bold flavors, citrus, spice, and fire-driven cooking [origendunedin.com] High standards for quality, presentation, and guest experience Ability to remain calm and decisive under pressure Detail-oriented with strong sense of ownership Team-first mindset with a hands-on leadership style Work Environment Fast-paced, high-energy, fine dining kitchen Evening, weekend, and holiday availability required Indoor and outdoor service support, including rooftop operations Why Join Origen?
