HACCP Full Job Description The Role:
Charcuterie Cold Chef. We are seeing a visionary Chef to lead the kitchen for a new concept start up restaurant in Downtown Orlando! The establishment is a Broadway themed sing along piano bar with singing staff and group sing alongs. If you have a love for putting together Charcuterie boards and a love of Broadway this is the place for you! You can even have the opportunity to take a break from the kitchen and come sing a song by the piano if you have vocal skills!
Our ideal candidate has:
  • A passion for putting together delicious charcuterie platters and can pair meat and cheese etc flavors well together.
  • Experience with sourcing ingredients and is able to build relationships with local vendors.
  • Extensive knowledge of HACCP and health department & sanitation standards.
  • Strong knife skills and decorative presentation (must be able to create salami roses and decorative vegetable garnishes.)
  • CFPM certification, or obtain within 30 days of being hired.
  • Can uphold the highest food safety standards to ensure ready to eat foods are safe and stored properly.
  • Experienced with food allergies and able to ensure cross contamination is at a minimum.
  • A positive attitude and strong work ethic, someone who doesn't cut corners and goes above and beyond to produce work they are proud of.
What you will do:
  • Before we open you will work with the owner to create the menu and pricing.
  • Design "Chef specialty" charcuterie boards, & boards themed to the local Broadway show that is in town, the current holiday, and special dietary needs.
  • Oversee daily specials and offerings, ensuring there are always 5-6 options available for each charcuterie category, as well as vegan and GF options.
  • Prep the charcuterie items before service.
  • Assemble orders as they come into the kitchen in a timely manner.
  • Monitor stock, control food costs and minimize food waste.
  • Order all food items and keep track of inventory.
