The Sous Chef at the Carriage House plays a critical role in supporting the Chef de Cuisine in overseeing kitchen operations. This includes ensuring high standards of food quality, managing the kitchen staff, and maintaining a safe, efficient, and organized kitchen. The Sous Chef is also responsible for supervising food preparation, ensuring timely service, and stepping into the lead role in the absence of the Chef de Cuisine. QUALIFICATIONS
Education:
Certification of culinary training Experience:
Minimum of 2 years of experience in a similar role, with a strong background in a highvolume kitchen and establishment Skills:
o Strong culinary skills with expertise in various cooking techniques and cuisines. Ability to lead and motivate a kitchen team. oExcellent organizational and multitasking abilities. Knowledge of health and safety regulations and best practices. Problem-solving skills and the ability to work effectively under pressure. KEY RESPONSIBILITIES
Kitchen Support:
Assist the Chef de Cuisine in managing the daily kitchen operations, including food production and plating. Ensure all dishes are prepared to the highest standards of quality and presentation. Team Leadership:
Supervise kitchen staff, providing guidance, training, and mentorship to maintain a cohesive and efficient team. Support the hiring, scheduling, and performance review processes for kitchen staff Food Quality & Standards:
Monitor food preparation and cooking techniques to ensure consistency and adherence to recipes. Oversee portion control, presentation, and timely execution of dishes during service. Health and Safety:
Ensure compliance with health and safety standards, including food handling, sanitation, and proper use of kitchen equipment. Maintain cleanliness and organization in the kitchen and storage areas. Inventory & Cost Control:
Assist in managing inventory, ordering supplies, and controlling food costs. Monitor stock levels and reduce waste through effective portioning and food storage practices. Innovation & Creativity:
Collaborate with the Chef de Cuisine in creating new dishes and seasonal menus that align with the Carriage House's culinary vision. Contribute ideas for new cooking techniques and presentations. Works with the management team to create recipes for new menu items, scales for appropriate volumes Operational Efficiency:
Ensure the kitchen operates smoothly during busy service periods. Step in to run the kitchen in the absence of the Chef de Cuisine, taking full responsibility for food quality and staff management. Customer Engagement:
Occasionally engage with guests to receive feedback and ensure their dining experience meets the highest standards. Administrative Duties:
Manage inventory levels, order supplies, and control food costs. Maintain accurate records related to inventory, staff schedules, and kitchen performance. PERSONAL ATTRIBUTES
