Duties Prepare and assemble a variety of sushi, sashimi, and other Japanese dishes with precision and artistry. Lead and supervise kitchen staff in sushi preparation, ensuring consistent quality and presentation. Manage inventory control for seafood, rice, nori, and other ingredients, maintaining freshness and minimizing waste. Oversee food production processes, ensuring adherence to food safety standards and sanitation protocols. Collaborate with the culinary team on menu planning, seasonal specials, and innovative sushi creations. Maintain cleanliness and organization of the sushi station, equipment, and storage areas. Assist in training new team members on sushi techniques, safety procedures, and restaurant standards. Skills Extensive experience in sushi preparation, including knife skills and fish handling. Proven supervising or team management experience within a restaurant or culinary setting. Strong background in fine dining environments with an emphasis on presentation and quality. Knowledge of food safety regulations, dietary accommodations, and sanitation practices. Excellent organizational skills for inventory management and food production planning. Ability to lead a team effectively while fostering a positive work environment. Experience with banquet service, catering events, or large-scale food production is a plus.
