  • Full-time he Sushi Chef is responsible for preparing and presenting high-quality sushi, sashimi, rolls, and other Japanese cuisine items according to standars.
This position plays a critical role in maintaining food quality, consistency, sanitation, speed of service, and guest satisfaction. Key ResponsibilitiesFood Preparation & Execution Prepare sushi rolls, sashimi, nigiri, hand rolls, and specialty menu items according to company recipes and presentation standards. Maintain consistency in portioning, quality, and plating. Ensure all products are prepared fresh and according to food safety guidelines. Execute orders accurately and efficiently during high-volume service periods. Assist in the development and testing of new menu items when requested. Quality Control Inspect fish, seafood, vegetables, and all ingredients to ensure freshness and quality. Monitor product rotation using FIFO procedures. Maintain strict quality standards for all food leaving the sushi bar. Ensure proper storage, handling, and labeling of products. Sanitation & Safety Follow all health department regulations and food safety standards. Maintain a clean and organized workstation throughout each shift. Properly clean and sanitize tools, equipment, and work areas. Comply with all company safety procedures. Inventory & Product Management Assist with inventory counts and product ordering as assigned. Monitor ingredient usage and report shortages or waste concerns. Minimize waste and control food costs through proper portioning and handling. Support efforts to maintain target food cost percentages. Teamwork & Communication Work closely with kitchen staff, managers, and service team members. Communicate product availability and operational needs to management. Assist in training new sushi team members as assigned. Support overall restaurant operations when needed. Qualifications Previous Sushi Chef experience preferred. Strong knife skills and understanding of Japanese cuisine. Knowledge of sushi preparation techniques and food safety practices. Ability to work efficiently in a fast-paced environment. Strong attention to detail and presentation. Reliable attendance and professional work ethic.
