POSITION SUMMARY
Responsible for preparing and presenting ZIGU's sushi and raw bar menu items to the highest standards. This role brings traditional Japanese sushi techniques together with fresh, locally sourced Hawaiian ingredients. In synchronization with the Chef de Cuisine and the Sous Chef, the Sushi Chef plays a vital role in ensuring a seamless guest experience.
DUTIES AND RESPONSIBILITIES
Prepare high-quality sushi, sashimi, and rolls according to ZIGU recipes, portion controls, and presentation standards. Expertly handle, breakdown, portion, and store fresh local fish and seafood following strict safety and quality guidelines. Prepare sushi rice, sauces, and garnishes daily to exact specifications. Read food orders or receive verbal instructions on food required by guests, and prepare sushi items accordingly. Work closely with front-of-house staff to ensure that orders are completed accurately and on time. Collaborate with other kitchen staff to ensure efficient service and a cohesive workflow across the line. Assist in managing seafood inventory, monitoring freshness, and ensuring adequate stock levels to prevent waste. Ensure that the sushi bar operations and food handling procedures meet standards and regulations. Maintain an exceptionally clean, organized, and sanitary workstation, including the proper care and maintenance of specialized sushi knives. Perform other shift duties as needed.
QUALIFICATIONS AND EXPERIENCE
Minimum 3 years of experience in a high-volume, quality-driven restaurant environment. Strong culinary skills with a deep understanding of sushi-making techniques, rice preparation, and precise fish cutting. Strong communication and interpersonal skills. Thorough knowledge of food safety standards, temperature controls, and sanitization regulations. Strong collaboration skills with the ability to coordinate effectively with both kitchen and service teams. A proactive approach to accommodate guest requests, food allergies, and dietary restrictions accurately. Ability to stand and move quickly for long periods in a fast-paced kitchen environment and lift up to 50 lbs. Must be flexible and able to work a variety of shifts, including days, nights, weekends, holidays, and special events.
