Jun 18, 2026 261 people viewed Required Years of Experience 3 years Job Details The Addled Bunny is a cocktail-driven gastro pub opening in Evanston. We are building a high-execution kitchen to match a serious bar program. We are seeking a working Chef—someone who leads from the line, produces at a high level, and builds a kitchen that runs clean, fast, and consistently. This is a hands-on role. You will be expected to cook every day and lead service from the front.
Responsibilities:
Work the line and lead service on a daily basis Execute and maintain a focused, high-quality menu Build and enforce prep, station, and service systems Hire, train, and develop a disciplined kitchen team Manage food cost, ordering, inventory, and waste control Maintain consistency across lunch, brunch, and dinner service Collaborate with ownership on menu development and operational improvements
Qualifications:
Proven experience as a Chef, Chef de Cuisine, or strong Sous Chef ready to step up Experience in high-volume, high-standard kitchens Strong organizational and time management skills Ability to perform under pressure and lead during busy service Solid understanding of food cost, yield, and kitchen economics Hands-on leadership style—you lead by working alongside your team Opening experience strongly preferred

Compensation & Benefits:
Base salary: $75,000/year, DOE Performance bonus: Up to $10,000 annually, paid quarterly Bonus tied to key metrics including food cost control, kitchen efficiency, and operational execution Quarterly bonus is based on clearly defined, trackable performance metrics reviewed regularly with ownership Opportunity to help build and shape a flagship concept from the ground up
