Sous Chef Margeaux Supper Parlor - 1.5 Cambridge, MA Job Details Full-time $26 - $29 an hour 2 days ago Benefits Paid time off Food provided Qualifications Spanish Google Workspace Line cook experience Food preparation for special diets Google Docs Operations management Event catering coordination ServSafe Fine dining experience Team leadership Supervising experience Managing kitchen staff Accommodating special dietary needs Sous chef experience Full Job Description Margeaux Supper Parlor is a refined dining restaurant in Porter Square, Cambridge, known for its unique small plate concept, and its New American fusion cuisine. Margeaux is currently seeking a full time Sous Chef to support the Chef de Cuisine both in daily operations, and execution of private events ranging from wine dinners to weddings. Responsibilities would include culinary execution, managing kitchen staff, and monitoring kitchen operations.
Culinary Execution:
Execute and oversee preparation of all menu items to restaurant standards Ensure consistency, quality, presentation, and proper portioning during service Assist in seasonal and special event menu development, and recipe testings Review special event menus with Chef de Cuisine ("CDC"), and assist in the preparation and execution of those menus Expedite service and communicate effectively between front and back of house.
Kitchen Leadership:
Supervise and support line cooks and pastry during service Train and mentor kitchen team members on dishes, including: techniques, plating, organization, and sanitation Foster a professional, respectful, and team-oriented kitchen culture. Be a person that bridges the communication between CDC and the other kitchen staff. Lead when CDC is not in the kitchen; maintain a professional attitude and demeanor
Operations & Organization:
Monitor inventory levels and assist with ordering and receiving products. Communicate to CDC when certain items are low, both on the line and in storage. Ensure that kitchen staff are completing daily cleaning checklist Enforce food safety, sanitation, and health department standards at all times Required Prior Experience Proven experience in fine dining environments with a strong background in food production and kitchen management. Demonstrated supervisory experience leading kitchen staff in fast-paced settings. Strong organizational skills, with significant experience in planning and preparation in event menu execution. Familiarity with dietary department procedures and dietary restrictions handling. Preferred Additional Qualifications Fluent in Spanish & English Experience with Google Drive, including Google Sheets and Google Docs Familiarity with New Orleans and Creole cuisine
Pay:
$26.00 - $29.00 per hour
