) About the Role We are seeking a passionate and skilled Indian Chef with deep expertise in traditional biryani preparation. The ideal candidate brings a mastery of slow-cooking techniques, spice blending, and the sacred art of dum — to consistently deliver biryanis that are aromatic, perfectly layered, and unforgettable. Core Specializations Chicken Biryani Marinated tender chicken layered with fragrant basmati, saffron, and caramelised onions in classic dum pukht style. Egg Biryani Golden fried eggs nestled in spiced rice with whole masalas — a comfort staple executed with precision and flavour depth. Veg Biryani Seasonal vegetables slow-cooked with aromatic rice, fresh herbs, and a balanced masala — rich, wholesome, and vibrant. Raitha Freshly prepared cooling yoghurt accompaniment — plain, boondi, or vegetable — whisked smooth and seasoned with roasted cumin, coriander, and mint to perfectly balance the heat of the biryani. Mirchi ka Salan Authentic Hyderabadi green chilli curry simmered in a rich gravy of roasted peanuts, sesame, coconut, and tamarind — the essential traditional side dish served alongside biryani. Familiarity with regional styles (Hyderabadi, Lucknawi, Kolkata, Malabar) is a strong advantage.
