Scratch KC is searching for a Laminating Specialist who loves the art and science of laminated dough. This is not a management desk job. This is a hands-on production role for someone who genuinely enjoys working behind a sheeter, creating beautiful pastries, and producing consistent, high-quality products every day. Responsibilities & Shifts:

All shifts start at 7:00am (no early mornings! no overnights!) Lead daily laminated dough production Operate and maintain commercial dough sheeters and related equipment Produce croissants, Danish, cinnamon rolls, biscuits, puff pastry, and specialty laminated products Mix, scale, fold, sheet, and shape doughs with precision Monitor dough development, fermentation, proofing, and baking performance Maintain consistency across large production runs Troubleshoot dough performance and make adjustments based on temperature, humidity, and ingredient variables Work closely with production leadership on new products and process improvements Uphold the highest standards of food safety, quality, and cleanliness Skills we are looking for: Professional pastry or bakery experience Strong experience with laminated dough production Experience operating commercial sheeters Deep understanding of butter lock-in, folds, proofing, fermentation, and dough handling Ability to work efficiently in a production environment Pride in craftsmanship and attention to detail Dependable, positive attitude, and team-oriented mindset Bonus Points Experience in wholesale bakery production Experience scaling recipes and production systems Experience training other bakers Knowledge of artisan bread or viennoiserie production What Success Looks Like The right candidate is happiest when they are making dough, laminating dough, shaping pastries, and improving production every day.
