The Firebrand Hotel , centrally located in downtown Whitefish is seeking a Chef to join our Food and Beverage Team.
PRINCIPLE RESPONSIBILITIES AND POSITION PURPOSE
The Executive Chef is in charge and responsible for every part of the kitchen which includes all preparation of food that comes out of the kitchen, the staff, and the administrative duties associated with all food service operations.
ESSENTIAL FUNCTIONS
Create a menu. Manage food cost to budget. Shop for lower prices. Manage all controllable COGS to budget-kitchen supplies, etc. Manage kitchen labor cost to budget. Food preparation, inventory, and selection. Contract with vendors. All purchasing and ordering. Approve food pricing. Supervise all selection of food for breakfast, lunch, dinner and banquets. Manage staff including recruiting, hiring and terminations. Coach, train and mentor staff. Schedule staff to ensure proper coverage. Monitor equipment. Set standards and guidelines for sanitation and safety. Prepare and manage adherence to SOPs for all meu items from preparation to production. Attend all necessary meetings including weekly staff and F&B. Work with Sales Team to produce one of a kind events/menus.
REQUIREMENTS
Keen sense of taste and smell. Ability to create and have a flair for new dishes and new combinations of dishes. Good organizational and managerial skills. Leadership skills Willingness to work long and flexible hours. Experience working in a professional kitchen as an Executive Chef of all aspects of management and culinary areas. Formal education is not required; however significant work experience is required in a professional kitchen as an executive chef. Culinary school, restaurant and/or hotel management and basic computer knowledge is preferred.
