We are bringing a modern, luxurious, and elevated Japanese culinary experience to the area, featuring meticulously crafted sushi, premium grilled dishes, and an innovative beverage program. We are looking for passionate, detail-oriented hospitality professionals to join our opening team and help us set a new standard for dining in Durham. Job Details The Sushi Chef is the artisan of uwa sushi & grill. You will be responsible for sourcing, fabricating, and presenting premium seafood. Working at the visible sushi bar, you will provide a captivating, interactive experience for guests while producing exquisite nigiri, sashimi, and maki. Responsibilities Expertly break down, cure, and prepare whole fish and premium seafood to maximize yield and quality. Prepare and season sushi rice to exact specifications. Execute a high volume of sushi orders with precision, speed, and artistic presentation. Engage with guests seated at the sushi bar, explaining fish origins and providing a curated omakase experience. Maintain impeccable cleanliness, sanitation, and organization of the sushi bar and display cases. Education and/or Experience Minimum 3years of dedicated experience as a Sushi Chef in an upscale or authentic Japanese restaurant. Deep understanding of traditional and modern sushi trends. Physical Demands Standing in one area for extended periods. Precise, repetitive hand and wrist movements. Ability to lift up to 40 lbs (e.g., large fish, bags of rice). Required Skills Master-level knife skills and advanced knowledge of fish and preservation. An artistic eye for plating and presentation. Charismatic and professional demeanor for direct guest interaction. Strict adherence to raw seafood handling and health department regulations.
