Job Description

Executive Chef Opportunity A successful Midwest private country club is seeking a full-time creative and dynamic Chef to direct the culinary team and member experiences. The Club is undergoing an extensive remodel and a completely new kitchen including a banquet and prep kitchen. Our best possible candidate would hold a culinary degree and have three or more years of culinary management experience in a successful country club, hotel or restaurant. A current Sous chef with five years of experience is also encouraged to apply.
Position Summary:
The Executive Chef is the leader of the Culinary team at the Club, as such, he/she holds one of the management positions most critical to the success of the overall Club operations and success. In addition to superior culinary skills and creativity, the executive chef needs to be a leader of personnel, a strong motivator, skilled communicator, a qualified trainer an efficient, organized business person, and a team leader. Because the position is physically demanding, the Executive Chef must be in good health, good physical condition and observe healthy living habits.

$80,000 to $85,000
The Member Culinary Experience:
Grow the culinary team and develop a culture of excellence and "can do" attitudes. Develop daily and specialty menus that reflect the local flavors and seasonal opportunities that are consistent with the Club's culinary legacy. Skilled in food presentation techniques and maintain high-quality standards for all menu options. Collaborate with Club Manager F&B Manager, and Board of Directors to develop long-term and strategic planning to improve the overall quality of the club's dining experience. Grow a culture to exceed member and guest expectations relating to their dining experience, food preferences, dietary and special needs. Provide the highest quality food products available to the members and guests with an emphasis on budgeted costs as developed with the Club manager and Board of Directors. Interact with all members and guests within the Clubhouse to promote the highest level of culinary experience with a positive attitude. Work with members and their representatives to plan and execute golf tournaments, special events, holiday parties, wedding receptions, and corporate events. This may require development of menus not currently offered at the club.
Administrative Duties:
Develop an annual budget forecast with the Club Manager, monitor revenue and expenses throughout the year, and adjust menu pricing, staffing or menu offerings accordingly. Evaluate and direct all kitchen operations to meet budgets, control cost and maintain quality. Effectively manage food costs and food inventories, including the research, ordering, and receiving and storage of all food products Create kitchen staff schedules to ensure proper coverage and control of labor costs. Maintain a clean, sanitary and working kitchen ensuring all equipment is sanitary and in good working condition. Adhere to all Health and Sanitation standards for the state, county and city. Perform other administrative duties as needed.
