Lucky Lantern - Chef The Nash Casino - 1.0 Nashua, NH Job Details Full-time 1 day ago Qualifications Food service health code compliance Safety regulations Regulatory compliance Communication with kitchen staff Full Job Description Essential Job Responsibilities Develop, refine, and execute the Noodle Bar menu, ensuring offerings are seasonal, relevant, and aligned with guest preferences and market trends. Create, standardize, and document recipes to ensure consistency in flavor, presentation, and quality. Collaborate with culinary leadership on innovative dishes and menu enhancements. Oversee plating and presentation to ensure dishes meet brand and quality standards. Ensure food is consistently prepared, plated, and served according to established recipes and specifications. Streamline kitchen operations to maintain high levels of service efficiency and food quality in a fast‑paced environment. Balance production flow to meet service demands during peak and off‑peak periods. Safely operate all kitchen equipment and use cleaning and sanitizing products according to SDS and departmental guidelines. Hire, train, mentor, and lead kitchen staff to ensure adherence to culinary standards and company values. Create efficient staff schedules that support business needs while managing labor costs. Foster a positive, collaborative kitchen culture that encourages communication, accountability, and professional development. Regularly assess team performance, providing coaching and constructive feedback to support growth. Enforce strict food safety, sanitation, and hygiene protocols in accordance with Health Department regulations. Maintain clean, organized, and sanitary work areas at all times. Ensure full compliance with company policies, safety procedures, and regulatory requirements. Work safely by following all safety protocols, responding appropriately in emergencies, and reporting unsafe conditions immediately. Education & Experience Minimum of 3 years of experience working in a high‑volume culinary environment. Prior leadership or supervisory experience in a fast‑paced kitchen preferred. Advanced knowledge of food safety, sanitation standards, and health regulations. ServSafe and Allergen Certification preferred or willingness to obtain upon hire. Strong organizational skills with attention to detail. Excellent verbal and written communication skills. High integrity, professionalism, and the ability to lead by example. Must be able to work extended shifts and adapt to an ever‑changing work environment. Ability to tolerate high heat, cold storage environments, and rapid temperature changes. Ability to communicate clearly with coworkers, vendors, and guests. Ability to work in environments with loud noise, overhead music, live entertainment, and areas where smoking is permitted. Requires hand-eye coordination and the ability to distinguish letters, numbers, and symbols.
