Overview Kitchen with an Amazing View and Air Conditioning!!! Sully's Chowder House is a busy Waterfront Restaurant with New England Concept. We are seeking a passionate and highly skilled Chef de Cuisine with a specialized focus on seafood to lead our culinary team in delivering exceptional dining experiences. This dynamic role offers the opportunity to craft innovative seafood menus, oversee kitchen operations, and elevate our restaurant's reputation for fine dining excellence. As the culinary leader, you will inspire your team, ensure impeccable food quality, and uphold the highest standards of food safety and service. Your expertise in seafood preparation, kitchen management, and team supervision will be pivotal in creating memorable moments for our guests. Responsibilities Lead the development and execution of creative seafood menus that highlight freshness and culinary artistry Oversee daily kitchen operations, ensuring efficient workflow and adherence to food safety standards Supervise and mentor culinary staff, fostering a collaborative environment focused on excellence and continuous improvement Manage inventory control and food production processes to minimize waste and optimize resource utilization Ensure consistent quality in food preparation, presentation, and service across all seafood dishes Coordinate with the dietary department to accommodate special dietary needs while maintaining menu integrity Oversee catering events, banquets, and special functions involving seafood cuisine, ensuring seamless execution from start to finish Maintain compliance with health regulations and safety protocols, conducting regular staff training on food handling and safety procedures Collaborate with restaurant management on menu planning, shift scheduling, and operational improvements Monitor food industry trends related to seafood cuisine to keep offerings innovative and competitive Qualifications Proven experience in fine dining establishments with a strong background in seafood cuisine Demonstrated leadership skills with experience supervising culinary teams in fast-paced environments Extensive knowledge of food production, kitchen management, inventory control, and food safety standards Experience in banquet service, catering, and large-scale event coordination is highly desirable Strong skills in menu planning, food preparation, and serving techniques specific to seafood dishes Familiarity with dietary requirements and ability to adapt menus accordingly Excellent organizational skills with the ability to manage multiple priorities effectively Previous restaurant management experience is preferred; hospitality background is a plus Certifications in food safety and handling are required; additional certifications such as bartending or culinary credentials are advantageous Join us as our Chef de Cuisine (Seafood Experience) to lead an energetic team dedicated to culinary excellence.
